Storage changes the balance of taste and aroma compounds, but it does not improve every dish: refrigeration and reheating can also dull aromas or create warmed-over flavors. Whatever the flavor outcome, leftovers must be cooled and stored safely.
Why can curry or stew taste more rounded after a night in the fridge?
Flavor is a combination of taste and aroma, and both can shift as food is stored and reheated. In a mixed dish such as curry, changes to several components may make the overall flavor seem more integrated, even when individual compounds do not become stronger.

A 1989 study examined canned cooked curry stored at room temperature. It reported decreases in measured free amino acids, organic acids, free fatty acids and volatile components. The authors suggested that a better balance among components might explain why the stored curry showed a more delicious taste. That finding concerns canned curry under the study’s conditions; it does not establish what happens to every homemade curry in a refrigerator.

Chef Anita Jaisinghani described the effect in lamb curry: “The lamb curry has onions, ginger, cloves, cinnamon, cardamom, black pepper, turmeric, cumin and coriander, and the taste is mellower, smoother and rounder the next day,” she says. The observation fits the experience many people report, but it is not proof that spices uniformly “soak in” overnight or that one mechanism explains all dishes.

Why don’t all leftovers improve?
Refrigeration can diminish desirable aromas, and reheating can bring out unpleasant notes. A 2024 study of precooked stewed beef linked warmed-over flavor to increases in lipid-oxidation products and decreases in odorants associated with pleasant aromas. The result is a useful counterexample: storage can shift flavor in a less appealing direction, too.
As a practical heuristic—not a tested ranking—moist, strongly seasoned mixed dishes may be more likely to seem rounded after resting because their components and aromas change together. Delicate aromas or textures may instead fade or suffer during storage. There is no universal next-day flavor rule, and the available studies do not quantify which food categories improve most.

How to store and reheat leftovers safely
Flavor is never a reason to leave cooked food out overnight. USDA Food Safety and Inspection Service guidance says bacteria grow rapidly between 40°F and 140°F. For U.S. household handling, use these steps:
- Refrigerate promptly: Put leftovers in the refrigerator within two hours of cooking, or within one hour if the surrounding temperature is above 90°F.
- Cool large batches quickly: Divide them among shallow containers rather than leaving a large pot to cool slowly. Cover or seal the food before refrigerating.
- Use refrigerated leftovers within 3 to 4 days: This is the USDA FSIS recommended refrigerated storage period.
- Reheat thoroughly: Heat leftovers to 165°F, checking the temperature with a food thermometer. In a microwave, check several places because heating can be uneven. Bring soups, sauces and gravies to a rolling boil.
A shallow food-storage container can help divide a large batch for faster cooling; an instant-read food thermometer can check the reheating temperature.
