Microwaved water can become hotter than its normal boiling point without visibly bubbling because the first steam bubbles may never get started. In a smooth, clean cup, there may be few places for bubbles to form; the water can remain liquid briefly, then boil abruptly when moved or disturbed. That sudden boiling can eject scalding water.
What “superheating” means
At standard atmospheric pressure, pure water ordinarily boils at 100 °C. If water rises above that temperature but stays liquid because boiling has not begun, it is temporarily superheated. The boiling point is not universal: pressure and dissolved substances can change it. The Hong Kong Observatory explains the pressure relationship in its supercooling and superheating explainer, while the University of New South Wales (UNSW) discusses the 100 °C figure for pure water at or near atmospheric pressure in its physics explanation.

Why water can stay liquid above its boiling point
Bubbles need a place to begin
Boiling is not simply a matter of reaching a particular temperature: a vapor bubble must first form and become stable. Creating that first bubble requires an energy input because it must form a boundary between vapor and liquid and displace surrounding water. Rough spots, tiny trapped gas pockets, or particles can make bubble formation easier by providing a starting point. Without a suitable starting point, water may remain liquid for a time even above its usual boiling temperature. This delayed start is called nucleation-limited boiling. Work described in the 2000 Journal of Chemical Education article by Ben H. Erné and Penny A. Snetsinger confirmed superheating and showed how rough particles can trigger nucleation.
Microwave heating may leave fewer triggers
Microwaves pass through many common containers, including glass, paper, ceramic, and some plastics, and are absorbed by the food or liquid. The FDA explains that water molecules vibrate and produce heat in its microwave oven guidance. The container may absorb comparatively little energy, so it may not provide the hot surface that helps bubbles start in a kettle or saucepan. A kettle’s element or a pan’s heated surface can initiate bubbles and disturb the water as it heats; microwave-heated water may be less disturbed. This is why the comparison is about how heating and bubble formation begin, not a guarantee that one method is risk-free.

Why a small disturbance can cause sudden boiling
Once a bubble begins, nearby superheated water can evaporate into it quickly. Picking up the cup, stirring, or adding a spoonful of instant coffee or sugar can provide the disturbance or new bubble-forming sites that were missing. The water may then boil rapidly and spill or erupt from the cup. The FDA says it has received reports of serious burns and scalds from this kind of event; it does not provide a count or incidence rate. The Hong Kong Observatory also notes that perturbing superheated water can trigger sudden boiling.
UNSW gives a thermodynamic illustration: one litre of water superheated by 1 °C can suddenly produce about three litres of steam. That is an explanatory calculation from its physics page, not a prediction for every cup or microwave.

How to reduce the risk
- Follow the instructions and recommended heating times for your specific microwave model; do not keep heating water beyond them.
- The FDA says adding instant coffee or sugar before heating greatly reduces the risk of superheating.
- UNSW describes having a nonsmooth, non-metal object in the water during heating as a risk-reduction measure. Do not assume any utensil is microwave-safe: check the appliance and container instructions, and avoid metal unless the manual explicitly permits it.
- Handle a heated cup cautiously, keep your face away from the open microwave and container, and avoid sudden movements or leaning over the water.
- Do not deliberately try to create superheated water or stage an eruption as a demonstration.
If you regularly heat water for a drink, a kettle is another option: its heated element or surface can initiate bubbles and stir the water as it heats. That mechanism does not remove the ordinary risk of scalds from hot water.
