Choose a steam oven setting by the texture and cooking result you want: use steam for gentle, moist cooking; convection for familiar baking and roasting; and combination steam for roasting or baking when you want added moisture. For leftovers or dough, look for a reheat/regenerate or proof program. Exact temperatures, times, and program names depend on your oven, so use its manual or cooking table for the final settings.
Everyday steam oven settings by cooking goal
| Goal | Setting to look for | Best fit | What to check |
|---|---|---|---|
| Cook gently and keep food moist | Steam, full steam, or pure steam | Vegetables, grains, rice, and seafood | Temperature, cooking time, water setup, and pan position in your oven’s manual. |
| Roast with added moisture | Combination steam or convection steam | Meat, poultry, and vegetables | Whether your oven uses humidity percentages, named levels, or presets. Follow its own cooking table. |
| Bake | Convection or a dedicated steam-bake program | Bread and other baked goods | Recipe, rack position, preheating instructions, and whether your model has a steam-bake mode. |
| Reheat cooked food | Reheat or steam regenerate | Precooked food that may benefit from added moisture | Whether you want the food moist or crisp, and the model’s reheat instructions. |
| Help dough rise | Proof or steam proof | Dough that could dry out during proofing | Your oven’s temperature and setup guidance. |
| Brown or crisp the surface | Dry convection or a broil/grill finish | Food that needs surface color or a crisp finish | The recommended finishing mode for your oven and recipe; high steam alone is not a browning method. |
What each mode does
Steam-only: moist, gentle cooking
Steam cooking is a useful starting point when you want food to cook gently without drying out. Manufacturer guidance lists vegetables, grains, rice, and seafood among common uses. The exact temperature and time still depend on the food, portion, pan, and oven.

Convection: familiar baking and roasting
Convection uses circulated hot air and is the familiar choice for many baking and roasting tasks. Use a recipe’s instructions as a starting point, then follow your oven’s guidance for rack position and preheating.

Combination steam brings convection heat together with steam. It can suit roasting meat, poultry, and vegetables when you want moisture as well as hot-air cooking. Gaggenau gives a general 60% humidity suggestion for these foods on its equipment; treat that as guidance for the relevant equipment, not a universal setting for every brand or recipe. Reheat or steam regenerate: restore cooked food
Some ovens offer a dedicated reheat or regeneration program for precooked food. Fisher & Paykel describes Steam Regenerate as a mode for precooked foods, while Wolf’s cookbook resource describes reheat as using steam and hot air to rehydrate food. Choose the program based on the texture you want and follow the instructions for your specific model.
Proof: keep dough from drying
A proof or steam-proof mode can help prevent dough from drying while it rises. Fisher & Paykel says its proof function does not require preheating and calls for the oven to be around room temperature. Those details apply to that model’s guidance; other ovens may specify a different setup.

- 14-IN-1 VERSATILITY: One multicooker, air fryer toaster oven, and countertop oven in a single appliance — Combi Meals, Combi Crisp, Combi Bake, Rice/Pasta, Sear/Sauté, Steam, Bake, Toast, Pizza, Slow Cook, Proof, Sous Vide, Air Fry, Broil.
- COOKS FROZEN FOOD WITH NO DEFROSTING: Go from freezer to table in under 30 minutes. Super-heated steam thaws and cooks frozen chicken through to a safe internal temperature, then rapid cyclonic air crisps the outside like a large air fryer — no thawing, no dry spots.

- XL CAPACITY, SMALL-OVEN FOOTPRINT: Feeds up to 8 and fits a 6-lb roast chicken, a 5-lb top round roast, a 10-inch pizza, 24 oz of pasta, 4 cups of dry rice, or 2 lbs of fries — in a compact countertop footprint.
- NINJA COMBI COOKER TECHNOLOGY: HyperSteam and Air Fry work together for juicy insides and deliciously crispy outsides at once — the air fryer steamer combo a standard toaster oven or air fryer can't match.
How to choose a setting without guessing
- Start with the food and texture. Choose steam for gentle, moist cooking; convection for ordinary baking and roasting; and combination steam when you want convection heat with added moisture.
- Check for a dedicated program. If your oven has a food-specific preset, proof, reheat, or steam-bake mode, compare its instructions with the recipe. Available programs and their names vary by appliance.
- Use the exact model’s cooking table for time and temperature. There is no universal setting chart that applies across all ovens, foods, portion sizes, and pan arrangements.
- Add dry heat when the surface matters. For browning or crisping, use the convection or broil/grill finish recommended for your model and recipe.
Why settings and recipe conversions vary
Steam ovens expose different controls. One may offer separate steam, convection, and combination modes; another may use steam levels or automatic programs. On equipped Electrolux models, Steamify automatically sets the steam level based on the selected temperature. Check your appliance’s manual to see which controls and programs it actually supports.

This is a manufacturer suggestion, not a guaranteed adjustment. Food size, starting temperature, recipe composition, oven design, and selected mode can all affect the result. Check food for doneness and consult both the recipe and your appliance guidance rather than applying the reduction mechanically.
