What Do Matcha Grades and Labels Actually Mean? A Practical Buying Guide

“Ceremonial,” “premium,” “café” and “culinary” are not official Japanese grades. They are commercial descriptors whose meanings vary by supplier. Two tins carrying the same word can differ in harvest, region, cultivar, shading, milling, freshness and price.

The dependable way to judge matcha is to look past the front-label grade. Confirm that it is powdered tencha, then compare the harvest and picking, origin, cultivar or blend, shading information, milling, freshness, intended use and any testing documentation.

What the familiar grade words actually mean

No Japanese government or industry-wide standard defines “ceremonial,” “premium,” “café” or “culinary” matcha. A September 2026 buyer guide describes them as shorthand that suppliers use differently. One seller’s “premium” may be another seller’s everyday product, so the word itself cannot establish quality, authenticity or value.

In practice, these labels usually point toward a bundle of tendencies: earlier or later harvests, younger or older leaves, brighter or duller color, sweeter or more astringent flavor, finer or coarser milling, named origins or blends, and a target use such as whisking, lattes or baking. Those tendencies can help you form a question, but they are not guarantees.

— Japan Matcha Agent buyer guide, updated September 2026

First establish whether it is matcha at all

Authentic matcha is made from tencha, not simply any green-tea leaf ground into powder. The National Agriculture and Food Research Organization (NARO) describes tencha as tea leaves that are shaded, steamed and dried without rolling, then ground into matcha. The Japan Tea Central Association likewise identifies shaded tea gardens and tencha as the base for matcha.

Powdered sencha and other green-tea powders are different products. They may be useful ingredients, but a package that says only “green-tea powder” has not established that it contains tencha. Check the ingredient description or ask the seller directly.

What each label tends to signal

The table below translates common marketing language into the questions it should prompt. None of the descriptors is a legal category.

Front-label term What sellers commonly intend What to verify What the word cannot prove
Ceremonial A powder selected for whisking, often associated with younger leaves, vivid color, sweetness, umami and fine texture. Tencha identity, harvest and picking, origin, cultivar, shading, milling date and sensory description. A universal quality threshold, a particular region or a guaranteed flavor.
Premium A higher-priced or more carefully specified product; the seller may be emphasizing origin, harvest, milling or presentation. The actual specification and price per gram rather than the adjective. That it is better than every product labeled “standard” or “culinary.”
Café A powder formulated for milk drinks, where color and a relatively low astringency can remain noticeable in a latte. Intended preparation, flavor profile, color performance in milk and ingredient identity. That it is unsuitable for drinking with water or that it is inferior in every use.
Culinary A powder intended for baking, ice cream, sauces or other foods, where cost, color retention and compatibility with other ingredients matter. Tencha versus another tea powder, color and flavor targets, lot information and freshness. That it is counterfeit, unsafe or automatically low quality.

How to read a tin or pouch: seven checks

  1. Identify the raw material. Look for “tencha” and a clear statement that the product is matcha. If the package says sencha powder, green-tea powder or a generic tea blend, treat it as a different product.
  2. Find the harvest year and picking. A first harvest and a later harvest are not interchangeable descriptions. If the year or picking is absent, record that omission instead of assuming the product is from the newest harvest.
  3. Check origin and cultivar. A named region, field or cultivar gives you something to compare. A single-origin product and a blend can both be legitimate; the important point is knowing which one you are buying.
  4. Look for shading information. Shading is part of how tencha is produced. Some sellers state how long plants were shaded, while others do not. Missing duration is a missing specification, not proof that no shading occurred.
  5. Ask how it was milled. Suppliers may distinguish fine stone milling from faster or coarser milling. Particle-size information is more useful than a claim that the powder is simply “smooth.”
  6. Check milling date and packaging. Matcha is a finely ground product whose aroma, color and flavor depend on freshness. Prefer a package that states when it was milled and explains how it is sealed and stored. A packed-on or best-before date without a milling date gives you less information about the powder’s age.
  7. Match the stated use to your preparation. A whisking tin should be described in terms of aroma, sweetness and texture; a latte powder should address color and astringency in milk; a baking powder may prioritize color retention and cost. The intended use is part of the specification.

Choosing matcha for the job

Whisking with water

For usucha or another water-based preparation, fine texture, aroma, sweetness and a balanced umami character matter because there are few ingredients to mask defects. A product marketed for whisking is not validated by the word “ceremonial”; compare its tencha identity, harvest, origin, milling and freshness instead.

Lattes and café drinks

Milk changes the sensory balance. A latte powder needs enough color to remain visible and a flavor that does not become harsh when diluted. A product labeled “café” may be optimized for that context, but the label does not tell you whether it is tencha, how fresh it is or how it was milled. Those details still require checking.

Baking, ice cream and other foods

In dough, frosting or ice cream, the powder is mixed with sugar, fat and other ingredients. Color retention, dispersibility, flavor strength and cost per gram can be more important than delicate aroma. “Culinary” therefore describes a use case rather than a finding that the ingredient is defective. A whisking-oriented powder can be wasted in a recipe if its extra aroma and price are not perceptible after processing.

Does first harvest automatically mean better matcha?

Harvest timing is one of the signals behind grade language. Suppliers often associate first-harvest leaves with a younger, sweeter and more umami-rich profile, while later harvests may be described as more assertive or astringent. These are tendencies, not rules. Cultivar, region, shading, processing, blending and storage can change the result.

“First harvest” also needs a year and picking designation. A package that says only “first harvest” does not tell you when it was picked, and it may not identify whether the powder is single-origin or blended. Compare harvest information alongside the rest of the specification rather than paying for the phrase in isolation.

Why one matcha is vivid green and another is yellow or dull

Color is influenced by leaf material, shading, cultivar, processing and storage. Brighter green is commonly associated with higher chlorophyll and a fresh, vegetal profile; yellow-green or duller tones can accompany older material, oxidation or age. That relationship is useful as an observation, not as an authentication test.

A vivid color can result from factors other than overall quality, and a less vivid powder is not automatically fake. The NARO work found that laboratory composition measurements can help characterize samples, but it also reported that industrial-grade matcha and powdered green tea were difficult to distinguish using only some measured parameters. Sight alone cannot establish that a powder is tencha.

What the NARO study can—and cannot—tell you

A 2017 NARO study examined ten grades of tencha and market powders. Its tea-ceremony-grade samples had the following measured characteristics:

Measurement Reported result How to interpret it
Theanine More than 1.8 g per 100 g dry weight A composition feature observed in the tested tea-ceremony-grade samples, not a certification limit.
EGCG/EGC ratio Above 3.2 A ratio associated with the tested group; it does not authenticate an individual retail tin by itself.
Chlorophyll a More than 250 mg per 100 g dry weight A laboratory color-related indicator observed in those samples, not a universal “ceremonial” threshold.

The authors explicitly cautioned that hundreds of samples would be needed before minimum values could define a universal ceremonial grade. The study therefore supports using composition as one quality clue, not turning its sample figures into a pass/fail rule. A seller who publishes lot testing should identify what was measured, for which lot and under what method; a single number without that context is hard to compare.

Is premium matcha worth the price?

There is no universal answer because “premium” has no fixed specification. A higher price can reflect an earlier harvest, a named cultivar, a limited origin, slower milling, fresher packaging or simply a supplier’s positioning. Ask which of those costs you are receiving and whether you will notice the difference in your preparation.

For water-whisked tea, spending more on aroma and texture may be rational because the powder is the main ingredient. For a latte or a strongly flavored dessert, a less expensive powder that supplies stable color and acceptable astringency may deliver better value. Compare price per gram after checking the same fields for both products.

Common mistakes and how to avoid them

  • Treating “ceremonial” as a certification. It is not an official Japanese grade. Demand the underlying specification.
  • Assuming bright green proves authenticity. Color can be informative but cannot distinguish tencha from every other powder on its own.
  • Equating first harvest with guaranteed superiority. Harvest is only one variable among cultivar, origin, shading, milling and storage.
  • Calling culinary matcha “bad.” Culinary describes a target application. Judge whether it performs in your recipe.
  • Ignoring freshness. A vague best-before date gives less information than a stated milling date and packaging method.
  • Comparing package prices instead of usable value. Use price per gram and account for whether the product is intended for whisking, milk or food.
  • Using a laboratory number as a universal rule. The NARO figures characterize tested samples; they do not define a legally recognized ceremonial minimum.

A practical buying decision

  1. Reject or question any product that does not establish tencha as the raw material.
  2. Write down the harvest year, picking, origin, cultivar or blend and shading details.
  3. Compare milling method, particle-size information, milling date and packaging.
  4. Choose the intended-use profile that matches how you will prepare it.
  5. Use color and tasting notes as supporting clues, never as the sole proof of quality.
  6. Compare testing documentation and price per gram, then buy the product whose documented specification fits your use.

The most meaningful label is not the largest word on the front of the package. It is the collection of checkable details behind it: tencha identity, harvest, origin, cultivar, shading, milling, freshness and a use case that matches your cup or recipe.
