First, what do “port,” “remaster,” and “new game” mean?
These labels describe different kinds of releases. A port primarily brings an existing game to another platform. A remaster updates an older game for a new release, while a collection gathers multiple games together. A new game offers a new adventure, even when it uses familiar characters or a classic gameplay style. One release can mix categories: SONIC X SHADOW GENERATIONS includes a remaster and a new campaign.

What do the three games offer?
Sonic Origins: a remastered collection
Sonic Origins collects and remasters Sonic the Hedgehog, Sonic CD, Sonic the Hedgehog 2, and Sonic 3 & Knuckles. SEGA says Classic Mode retains the original stage designs and rules. Anniversary Mode presents the games in widescreen and removes time-over and continue limits. The Nintendo product page also describes unlockable content and a Museum.

Choose it if your priority is revisiting early Sonic games in a single collection, with a choice between a more original-feeling mode and a mode that changes the presentation and removes those limits.
Sonic Superstars: a new game in a classic style
Sonic Superstars is set in the new Northstar Islands and introduces Emerald powers. Sonic, Tails, Knuckles, and Amy are playable. Its official PlayStation listing describes local four-player campaign co-op and Battle Mode.

Pick it if you want a fresh setting and new abilities in a 2D platformer built around the classic Sonic style, rather than a collection of the early games.
SONIC X SHADOW GENERATIONS: a remaster and a new campaign
SONIC X SHADOW GENERATIONS pairs a remaster of Sonic Generations, with its 2D and 3D stages, with a new Shadow Generations campaign. It is the most direct option for someone who wants returning material and a separate new campaign together.

What sales and creator comments do—and don’t—tell you
