Carmine is permitted as a food color additive in the United States for specified uses, but it can cause allergic reactions in sensitive people. The U.S. Food and Drug Administration (FDA) says those reactions can be severe, including anaphylaxis. If you have had a suspected reaction, avoid carmine and cochineal extract until you have discussed it with a qualified healthcare professional.
What is carmine, and is it safe to eat?
Carmine and cochineal extract are insect-derived red color additives. FDA regulations permit their use in foods under the conditions specified in 21 CFR 73.100. That permission applies to specified uses; it does not mean the ingredient is risk-free for every person. FDA identifies these additives as potential allergens and says sensitive consumers can have severe reactions, including anaphylaxis.

FDA’s color-additive summary lists cochineal extract (E120) with an approval year of 1967 and carmine (E120) with a listed year of 2009. Those are regulatory dates, not statistics about allergy or safety. The summary also advises consulting the regulation for exact permitted uses and restrictions.
Can carmine cause an allergic reaction?
Yes. FDA materials identify carmine and cochineal extract as substances that can cause allergic reactions. The agency’s food-safety guidance specifically notes that sensitive consumers may experience severe reactions, including anaphylaxis. This establishes a possible serious risk for susceptible people; it does not show that severe reactions are typical.

- Net weight 1 ounce / 28.3 grams
- Contains water, beta carotene, carmine, cultured corn glucose, sugar and vegetable gum -- note: carmine is a NON-kosher ingredient
- Try the color in a small amount in your individual application to find what works best
- One way to avoid using too much is to test the baking color on surfaces by airbrushing
- Applying natural color to a dry surface you rarely rarely requires checking degree of pH, heat stability or other variables
The FDA sources cited here do not establish how common carmine allergy is, what dose might trigger a reaction, or a complete list of symptoms. A reaction after eating a product containing carmine does not by itself confirm an allergy, so discuss suspected symptoms with a qualified healthcare professional.
Who should avoid carmine?
If you have previously experienced a suspected reaction after consuming carmine or cochineal extract, avoid products containing either ingredient until you have spoken with a healthcare professional. This is a cautious step based on the documented possibility of serious reactions, not a diagnosis or a formal FDA recommendation for everyone.

FDA says consumers may report suspected adverse reactions related to color additives through its reporting channels: FDA Consumer Complaint Coordinators.
How do you find carmine on a U.S. food label?
When carmine or cochineal extract is present in a U.S. human food, FDA rules require the ingredient statement to identify it by its common or usual name: “carmine” or “cochineal extract.” FDA’s compliance guide says this applies to foods intended for human use, including butter, cheese, and ice cream. See the FDA guidance on declaration in foods and cosmetics.

Look for those exact names in the ingredient list. Do not rely on the major-allergen “Contains” statement alone: carmine and cochineal extract can cause allergic reactions but are not included in the major-allergen definition under the Food Allergen Labeling and Consumer Protection Act (FALCPA).
This labeling explanation is specific to the United States. Ingredient wording and allergen rules can differ elsewhere, so check the applicable local requirements when shopping outside the U.S. FDA also has separate labeling rules for carmine in cosmetics; those are distinct from food ingredient requirements.
