They both use besan, but the names do not always refer to the same dish. Some recipes use “besan ki sabji” as another name for gatte ki sabji; in other contexts, it means pitod or patodi ki sabji, in which seasoned besan is cooked until set and then cut into pieces. The clearest comparison is therefore between pitod ki sabji and gatte ki sabji.
Are besan ki sabji and gatte ki sabji the same?
Sometimes. The phrase “besan ki sabji” is ambiguous: one recipe source uses it as an alternate name for gatte ki sabji, while NDTV Food publishes a distinct Rajasthani pitod ki sabzi made from cooked, set besan. If a menu or recipe simply says besan ki sabji, check its method or ask which preparation it means.

What is the difference between pitod and gatte?
| Comparison | Pitod/patodi ki sabji | Gatte ki sabji |
|---|---|---|
| Form | Seasoned besan is cooked as a mass until set, then cut into pieces. | Seasoned besan is kneaded into firm dough, rolled into cylinders, boiled, and cut into pieces. |
| How the besan is cooked | Cooked into a set preparation before it is cut for the curry. | Shaped into rolls and boiled before the pieces go into the curry. |
| Seasonings and gravy | NDTV Food’s representative pitod mixture uses turmeric, red chilli, salt, hing, cumin, ajwain, and oil. Its recipe method supplies the curry context. | The cited recipe seasons the besan dough, including curd and oil, and finishes the pieces in a spiced curd-based gravy. Recipes vary. |
| Texture clue | The pieces come from set besan cut after cooking. | The pieces come from firm dough rolls cut after boiling. |
The preparation method is the most reliable distinction to look for. It does not establish that one dish is always softer, richer, or easier to make: recipes vary, and there is no standardized head-to-head texture comparison.

How gatte ki sabji is prepared
- Season besan and combine it with a little curd and oil, then knead it into a firm dough.
- Roll the dough into cylinders and boil them.
- Cut the boiled rolls into pieces and add them to a spiced, curd-based gravy.
This is one representative method, not a universal formula. Rajasthan Tourism’s descriptions of other gatte dishes show additional variation: Gatte ki Khichdi uses boiled or fried besan dumplings with spices, green peas, and aromatic rice, while Shahi Gatte uses deep-fried besan dumplings in thick curd-based gravy.

How pitod ki sabji is prepared
In NDTV Food’s representative Rajasthani pitod recipe, besan is seasoned with turmeric, red chilli, salt, hing, cumin, ajwain, and oil. The mixture is cooked until set, then cut into pieces for the curry. Unlike the cited gatte method, this process does not first roll the besan mixture into cylinders and boil them.

Besan means gram flour, so both dishes are besan-based, but that shared ingredient does not make their methods identical. Rajasthan Tourism documents gatte among regional besan-based preparations and describes several forms, rather than establishing a single canonical gatte ki sabji recipe or an exclusive origin story. The names “pitod,” “patodi,” and “besan ki sabji” can vary by recipe and household; the cooking method is a more dependable way to identify what is being served.
