Hydroponics usually uses less water per kilogram of produce than soil farming because water is delivered directly to the root zone and, in many systems, captured and recirculated. The advantage is real but not universal: crop, system design, climate, yield, and the way water is counted can change the result. Water savings can also come with substantially higher electricity demand.
What the comparison is really asking
“Water use” is not one universally defined number. A fair comparison should state the crop, production setting, geography, period, and accounting boundary. Irrigation supplied to a field is one measure; water lost through crop evapotranspiration is another; total life-cycle consumption can also include water used to manufacture inputs or generate electricity. Two studies can therefore report different percentages without either being wrong.

For practical decisions, the most useful first metric is water per kilogram of saleable produce. That measure links water demand to the food actually harvested rather than to the size of a field or greenhouse. It should be read alongside yield per square metre, energy per kilogram, nutrient losses, capital and operating requirements, crop quality, and local water and electricity conditions.
The clearest apples-to-apples evidence
The strongest directly comparable result in the available evidence is a modeled lettuce comparison for Yuma, Arizona, published by Barbosa and colleagues in 2015. Under that model, hydroponic lettuce required 20 ± 3.8 liters per kilogram per year, while conventional lettuce required 250 ± 25 liters per kilogram per year. The modeled hydroponic figure is roughly 92% lower than the conventional figure in that specific Arizona case.

| Measure | Hydroponic result | Conventional or soil result | Conditions and source |
|---|---|---|---|
| Water demand | 20 ± 3.8 L/kg/year | 250 ± 25 L/kg/year | Modeled lettuce production in Yuma, Arizona; Barbosa et al., 2015 |
| Yield | 41 ± 6.1 kg/m²/year | 3.9 ± 0.21 kg/m²/year | Same modeled comparison; Barbosa et al., 2015 |
| Energy demand | 90,000 ± 11,000 kJ/kg/year | 1,100 ± 75 kJ/kg/year | Same modeled comparison; Barbosa et al., 2015 |
The yield result explains why water per kilogram can diverge so sharply. The modeled hydroponic system produced about ten times as much lettuce per square metre per year as the conventional system, while using far less water for each kilogram harvested. That does not mean every hydroponic installation will achieve those values; the figures belong to the specified crop, location, assumptions, and model.
What controlled tomato trials show
A controlled glasshouse tomato study reported water-use efficiency as kilograms of tomatoes produced per liter of water. Higher values indicate more produce from each liter. Deep-water culture recorded 0.0129 ± 0.005 kg/L, drip hydroponics recorded 0.0099 ± 0.0039 kg/L, and soil recorded 0.0044 ± 0.0008 kg/L (Kuyah et al., 2021).
| Glasshouse tomato system | Water-use efficiency | Interpretation |
|---|---|---|
| Deep-water culture | 0.0129 ± 0.005 kg/L | Highest of the three tested systems |
| Drip hydroponics | 0.0099 ± 0.0039 kg/L | Higher than the tested soil treatment |
| Soil | 0.0044 ± 0.0008 kg/L | Lowest of the three tested systems |
These results support the direction of the lettuce model while showing why “hydroponics” should not be treated as a single technology. Deep-water culture and drip hydroponics had different efficiencies even under the same broad crop category. Root-zone oxygen, flow, nutrient concentration, reservoir management, greenhouse climate, and cultivar can all affect the liters required for a kilogram of tomatoes.
How much water can hydroponics save?
Protected lettuce comparison
An Agricultural Water Management study published in 2021 reported about 64% water savings for nutrient-film hydroponics compared with protected soil lettuce cultivation. Nutrient-film technique (NFT) sends a shallow stream of nutrient solution past the roots and returns it to a reservoir. The percentage applies to that crop and protected-production comparison, not to all field farming or every NFT installation.
Review evidence across crops and systems
A 2024 review by Regmi and colleagues found that some hydroponic crop-and-system combinations have potential water reductions of more than 90%. The review also stresses that operating conditions strongly determine the result. A recirculating system with well-managed flows can perform very differently from a poorly sealed or frequently drained system.

Examples from Australian closed systems
The World Bank reported 80–99% less water for closed-system farming in the Australian examples it cited in 2024. Those are examples of closed systems in a particular country and context, not a universal performance guarantee. “Closed” describes the intended recovery and reuse of solution; it does not mean that no water is ever discharged or lost.
Why hydroponic systems often need less water
Direct delivery to roots
In soil production, water must wet a volume of soil around the roots. Some of that water evaporates from the surface, drains below the root zone, or is carried away by uneven field conditions. Hydroponic channels, slabs, or containers deliver nutrient solution to a much more controlled root environment, reducing uncontrolled movement when the system is correctly designed.

Recirculation
Many hydroponic systems collect drainage in a reservoir, adjust its nutrient concentration, and send it back to the crop. The same water can therefore pass the roots repeatedly before a portion is replaced. The amount saved depends on leaks, evaporation, plant uptake, cleaning, deliberate discharge, and how often the operator refreshes the reservoir.
Climate and root-zone control
Greenhouses and indoor farms can regulate temperature, humidity, airflow, and irrigation timing. Better control can reduce unnecessary watering and keep plants productive during periods when outdoor conditions would increase stress. The controls themselves consume energy, however, and cooling or dehumidification can become a major part of the operating footprint.
Higher production per area
When a system harvests more kilograms from each square metre, fixed water losses are spread across more produce. This is one reason the Barbosa model paired a much higher hydroponic yield with a lower water figure per kilogram. A comparison based only on liters per square metre could tell a different story, so both area-based and product-based metrics matter.

Hydroponics is a family of systems, not one method
Nutrient-film technique
NFT uses a thin, continuously or intermittently moving layer of nutrient solution. It can recirculate efficiently, but pump failure, blocked channels, or an incorrect slope can quickly expose roots to drying. The 2021 lettuce comparison that found about 64% savings involved NFT in protected cultivation.

Deep-water culture
Deep-water culture keeps roots in an aerated nutrient solution. In the controlled tomato study, it achieved 0.0129 ± 0.005 kg/L, the highest water-use efficiency among the tested deep-water, drip-hydroponic, and soil treatments. Aeration equipment, reservoir temperature, and oxygen management still influence performance.
Drip hydroponics
Drip systems deliver nutrient solution to individual plants or slabs. They can be precise and highly productive, but excess drainage, emitter variation, and intentional flushing affect how much solution is recovered. The tomato study measured 0.0099 ± 0.0039 kg/L for drip hydroponics.
Soil and conventional field production
Soil farming ranges from carefully scheduled drip irrigation to less controlled field methods. “Conventional” is therefore a category rather than a single irrigation design. The 250 ± 25 L/kg/year result is specifically the conventional lettuce case modeled by Barbosa et al. in Yuma, not a value that describes every soil farm.
The energy trade-off can be large
Saving water does not automatically mean using fewer resources overall. In the Barbosa lettuce model, hydroponic energy demand was 90,000 ± 11,000 kJ/kg/year versus 1,100 ± 75 kJ/kg/year for conventional production. The authors summarized the result by writing that hydroponics “offered 11 ± 1.7 times higher yields but required 82 ± 11 times more energy compared to conventionally produced lettuce.”

Pumps, aeration, nutrient mixing, greenhouse heating or cooling, lighting, and water treatment can all add electricity demand. The energy penalty is especially important for indoor or heavily climate-controlled operations. A greenhouse that uses sunlight and a mild climate may have a very different energy profile from a fully enclosed facility using artificial lighting and mechanical climate control.
Whether the water saving is worth the energy depends on local priorities. In a water-scarce region with reliable low-carbon electricity, reducing withdrawals may be the dominant objective. Where electricity is expensive, carbon-intensive, or unreliable, a lower-energy irrigation upgrade to soil farming may provide a better overall balance.
How to make a fair comparison for a real project
- Define the crop and product. Specify lettuce, tomatoes, or another crop, and decide whether the denominator is saleable fresh mass, total harvested mass, or area.
- Fix the geography and season. Record latitude, climate, greenhouse or outdoor setting, and the production period. Water demand in a hot desert cannot be generalized to a cool, humid region.
- Name the system. Identify NFT, deep-water culture, drip hydroponics, or the soil irrigation method. Include whether the solution is recirculated.
- Choose the water boundary. State whether the calculation includes irrigation supplied, crop evapotranspiration, drainage and cleaning water, or life-cycle water associated with energy and inputs.
- Measure water and harvest together. Track make-up water, discharge, leaks, and harvested kilograms over the same period. Divide the relevant water total by saleable output.
- Record yield per area. A system can look efficient per kilogram because it produces more in the same footprint. Include kilograms per square metre per year to expose that effect.
- Track energy at the same time. Record pumping, aeration, heating, cooling, dehumidification, lighting, and treatment. Report energy per kilogram rather than only total electricity.
- Check nutrient losses and quality. Note solution discharge, fertilizer replacement, rejected produce, shelf-life targets, and any crop-quality differences.
- Test uncertainty. Use repeated measurements and report variability. The published studies express uncertainty with values such as ±3.8 L/kg/year for hydroponic lettuce water demand and ±0.005 kg/L for deep-water tomato efficiency.
Where hydroponics is most compelling
- Water-limited locations: Large reductions in water per kilogram can matter when freshwater withdrawals are constrained or expensive.
- High-value, fast-growing crops: The economics can better support reservoirs, pumps, monitoring, and climate control when frequent harvests and high yields are possible.
- Sites needing consistent production: Controlled environments can reduce exposure to weather swings, provided the operator can maintain the equipment and climate.
- Operations with suitable electricity: Reliable, affordable, and preferably low-carbon power improves the case when pumping or climate control is substantial.
Hydroponics is less automatically attractive where water is plentiful, electricity is costly, or the proposed system requires intensive heating, cooling, lighting, and frequent solution replacement. In those settings, improving soil irrigation scheduling, reducing leakage, and matching irrigation to crop demand may achieve meaningful savings with less infrastructure.
Common mistakes that inflate or distort water claims
Turning one percentage into a universal promise
Statements such as “hydroponics uses 90% less water” can be accurate for a cited crop and system while misleading as a general rule. The Regmi review’s “more than 90%” potential and the World Bank’s 80–99% Australian examples both carry conditions. Always attach the crop, system, location, and accounting method to the percentage.

Comparing different products or boundaries
Comparing liters of irrigation supplied to one crop with liters of evapotranspiration for another produces a false contrast. The denominator must also match: saleable kilograms, total kilograms, or area-based output.

Ignoring discharge and maintenance water
A recirculating reservoir still needs make-up water for plant uptake and evaporation. Operators may also dump solution to control salt accumulation, clean equipment, or correct nutrient errors. Those flows belong in the chosen water boundary.
Counting only the growing equipment
A water result without energy, nutrient, capital, and operating context is incomplete. The Barbosa model demonstrates why: hydroponics combined lower modeled water demand with dramatically higher modeled energy demand.
Assuming every crop responds the same way
Lettuce and tomatoes differ in canopy size, harvest pattern, root-zone demand, and climate sensitivity. Results from one crop should guide a hypothesis, not substitute for measurements on another.

Bottom line for different readers
If your priority is water per kilogram
The evidence favors hydroponics in the cited lettuce and tomato comparisons. The Yuma lettuce model is the clearest numerical example, and controlled tomato trials also found higher water-use efficiency for deep-water and drip hydroponics than for soil.
If your priority is total environmental impact
Do not decide from water alone. Include energy, especially when artificial lighting, heating, cooling, or dehumidification is required. The modeled lettuce comparison paired large water savings with an 82 ± 11-fold energy requirement relative to conventional production.
If you are choosing a system
Start with your crop, climate, water constraints, electricity mix, and ability to monitor and maintain equipment. Compare measured water per saleable kilogram under matching boundaries, then examine yield, energy, nutrient discharge, quality, and costs together. Hydroponics is most convincing when its water advantage addresses a real local constraint without creating an unacceptable energy or operating burden.
