How Winemakers Can Reduce Smoke Taint Risk in Vineyards

Smoke taint is best managed as an exposure-and-decision problem, not solved by a single spray or laboratory number. Reduce avoidable smoke contact before a planned burn, document and sample wildfire-exposed blocks representatively, keep suspect fruit separate, and use small-lot fermentation alongside laboratory analysis before committing to a wine style. These steps can lower smoke expression, but none guarantees that affected grapes or wine will be taint-free.

What smoke taint is and why vineyard conditions matter

Wildfire and prescribed-fire smoke can deposit volatile phenols on grape surfaces and allow them to enter berries. Important compounds include guaiacol and 4-methylguaiacol. Grapes can then convert some of these compounds into bound forms. Free compounds may contribute directly to smoky aromas, while bound forms can be released later during fermentation, storage or aging and cause aromas to return.

Smoke taint is therefore not determined by distance from a fire alone. Risk depends on the smoke’s concentration and composition, how long it remains over the vineyard, the fuel that burned, weather and atmospheric movement, and the vine’s growth stage. Smoke can travel beyond the area immediately adjacent to a fire.

Oregon State University Extension warns that as little as one hour of dense smoke exposure near or after veraison can negatively affect a crop. Treat that statement as a conditional risk observation, not a universal safe-or-unsafe threshold. A dispersed plume for a short period is not equivalent to dense smoke trapped over a block, and grapes exposed at another development stage may respond differently.

Risk factor What it changes Practical implication
Smoke concentration Higher concentrations deliver more smoke-derived compounds to berries. Dense, visible smoke requires a faster monitoring and sampling response than a thin, rapidly moving plume.
Exposure duration Longer contact increases the opportunity for compounds to enter berries. Reducing the time smoke remains over vines is a prevention priority for planned burns.
Timing near veraison Berries can be particularly vulnerable around and after this stage. Record vine-development stage when documenting an exposure.
Fuel and smoke composition Different fuels produce different mixtures of volatile phenols and other compounds. Do not infer equal risk from two fires that look similar from the vineyard.
Weather and terrain Wind, inversions and nighttime cooling can move or trap smoke. Track whether smoke dispersed, settled overnight or was carried into the block from elsewhere.

Reduce preventable exposure before a planned burn

Prescribed burns are the situation in which growers can most directly influence smoke risk. Oregon State University Extension recommends treating vineyards as smoke-sensitive resources and discussing timing and smoke movement with fire planners. The objective is not to promise zero exposure; it is to choose conditions that minimize contact.

Choose a dispersal window

Plan the burn for weather that carries smoke away from vineyard blocks. Fire planners should evaluate wind direction, expected changes during the burn and the possibility of an inversion. A forecast that looks favorable at ignition can become unfavorable later, so establish a stop or postponement criterion before lighting.

Shorten the time smoke remains over vines

Coordinate ignition patterns, staffing and burn size to avoid prolonged smoke production near grapes. A smaller or staged operation may reduce the duration of dense smoke, provided it remains consistent with the burn plan and safety requirements.

Avoid overnight settling

Nighttime cooling and stable air can hold smoke close to the ground. Avoid a schedule that leaves dense smoke over the vineyard overnight, when practical. Check conditions after the burn rather than assuming that smoke has dispersed because flames are out.

Prefer spring windows when feasible

OSU guidance favors spring burning when it can meet land-management goals, because it may avoid the greater sensitivity associated with smoke near or after veraison. If a fall burn is necessary, consider delaying it until after harvest when that is compatible with fire safety and ecological requirements.

These measures apply to planned burns. Growers cannot control the source or path of wildfire smoke. For wildfires, shift effort from prevention to exposure documentation, representative testing and rapid lot-separation decisions.

What to do immediately after suspected wildfire exposure

Start a block-by-block record while conditions are fresh. Note the date and approximate duration of visible smoke, whether the plume was dense or dispersed, wind and settling conditions, vine-development stage, variety, block boundaries and any differences between exposed and less-exposed areas. Keep photographs, field notes and harvest decisions with the lot records. This documentation can support discussions with buyers, insurers and winery partners.

Prioritize the blocks most likely to be affected

Sample blocks that received the heaviest or longest exposure first. Do not combine varieties or visibly different exposure zones into one sample. Varieties can produce different analytical and sensory results under similar smoke conditions.

Collect a representative grape sample

OSU recommends collecting clusters throughout a block and combining them into a representative sample. Avoid selecting only the easiest clusters to reach, only fruit at the edge of a block or only visibly damaged berries. Confirm the laboratory’s collection, container, shipping and preparation requirements before picking. If a crop-insurance claim may be involved, check the policy’s sampling and laboratory rules first; those requirements can determine whether a result is usable for the claim.

Use more than one way to assess risk

Laboratory analysis can identify smoke-related markers, but grape-only results do not reliably predict the sensory character of finished wine in every situation. OSU recommends pairing analysis with a microfermentation or nanofermentation made from exposed grapes, followed by sensory evaluation of the resulting wine.

Assessment approach What it can tell you Important limitation
Grape laboratory analysis Measures selected smoke compounds or markers in the submitted fruit. A result alone may not predict the aroma and flavor of the finished wine.
Micro- or nanofermentation Shows how the specific lot behaves after fermentation and provides wine for tasting. It is a small-scale indicator, not a guarantee of full-production results.
Combined analysis and microfermentation Connects chemical measurements with the lot’s fermentation and sensory behavior. Requires time, suitable controls and careful interpretation.
Sensory evaluation Identifies descriptors such as smoky, burnt, bacon, medicinal or ash-like character. Assessors differ in sensitivity, so one tasting is not infallible.

Use appropriate controls when tasting microferments, and record who evaluated them and under what conditions. Sensory results are evidence for a production decision, not an objective pass/fail measurement.

Where testing may be available

OSU identifies the OSU Smoke Testing Service, ETS Laboratories, IEH Laboratories and Consulting Group, and Supra R&D as testing options. Availability, turnaround times and sample requirements can change during a severe wildfire season. Confirm current capacity, preparation instructions and reporting time directly before shipping fruit.

Interpret smoke-marker results in context

There is no universally accepted number that separates tainted from untainted grapes or wine. OSU reports that the USDA Risk Management Agency has not established specific smoke-compound thresholds for determining smoke damage. OSU also notes that guaiacol, 4-methylguaiacol and other markers can occur naturally. A positive measurement, without a baseline for the relevant variety or wine, does not by itself prove that consumers will perceive smoke taint.

For an insurance, buyer or production decision, preserve the full context: the variety, block, sampling method, exposure history, laboratory method, baseline information, microfermentation result and sensory observations. Do not publish or use a single marker value as a universal pass/fail line.

Harvest and winery choices that limit extraction

Once fruit is suspected of smoke exposure, processing choices can reduce the amount of smoke-derived material extracted into wine. They are risk-reduction measures, not guaranteed remediation.

Keep suspect lots separate

Separate exposed fruit by block and variety from fruit with a different exposure history. Separate lots allow different fermentation, blending and sales decisions without spreading a problem through otherwise clean fruit.

Keep non-grape material out

Remove leaves and other vineyard material from the fermenter. Additional plant material can contribute undesirable aromas and makes it harder to interpret the source of sensory character.

Limit skin contact

Smoke compounds can be associated with grape skins and pulp. Shorter maceration and gentler extraction generally provide less opportunity for those compounds to enter wine than an extended, extraction-intensive red fermentation. For affected red grapes, consider whether rosé or another lower-skin-contact style is appropriate. This may reduce expression; it does not guarantee elimination.

Control fruit temperature and harvest handling

AWRI lists cooling fruit and, where practical, hand harvesting among measures that can help limit extraction or unwanted material. Keep fruit cool between harvest and processing, avoid crushing decisions that are not necessary for the chosen style, and move fruit promptly through a controlled process.

Separate press fractions

Keep press fractions separate so that more extractive fractions can be evaluated independently. This gives the winemaker the option to reject, blend cautiously or use only the fractions whose sensory and analytical results meet the intended quality standard.

Do not rely on washing

Washing berries is not an effective way to remove compounds that have entered the skins and pulp. It may remove surface debris, but it should not be presented as a treatment for smoke taint inside the berry.

Production choice Why it may help Trade-off or limit
Separate suspect lots Prevents exposed fruit from affecting cleaner fruit and preserves options. Requires additional tanks, records and decision time.
Lower skin contact or rosé processing Reduces extraction from skins and pulp. Changes style, color and potential value; does not assure taint-free wine.
Cool, careful handling Limits uncontrolled extraction and preserves fruit condition. Needs refrigeration and faster logistics.
Separate press fractions Allows selective use based on sensory and chemical results. Creates more lots to evaluate and store.
Berry washing Can remove some surface material. Does not remove compounds already inside skins or pulp and is not a smoke-taint solution.

Options for wine that is already made

OSU notes that reverse osmosis and spinning-cone treatments may reduce concentrations of free smoke compounds in finished wine. These treatments can affect aroma, flavor and structure, so evaluate them on small lots before treating an entire tank.

Bound compounds remain a concern: smoky characteristics can reappear over time as bound forms change and release volatile compounds. A treatment that improves a young wine’s immediate aroma is not proof of permanent removal. Compare treated and untreated controls, repeat sensory checks during storage and document quality effects before scaling up.

Why preventive vineyard coatings are not yet dependable

OSU has reported field research on spray-on coatings made from plant-based fibers and chitosan, intended to reduce smoke uptake. Some measured markers fell slightly under some exposure conditions, but results varied. Natural variation in smoke movement and grape response made firm conclusions difficult, and researchers called for more work on complete coverage and consistent exposure conditions.

OSU characterizes this approach as not yet dependable. Do not treat a coating as established protection, and do not alter a spray program or harvest decision on the assumption that it will block smoke compounds. Any experimental use should follow the product’s legal label, local agricultural requirements and an approved research protocol.

A practical decision sequence for growers and winemakers

  1. Before a planned burn: share vineyard locations with fire planners, select a dispersal window, avoid overnight settling, reduce smoke duration and favor spring or post-harvest timing when feasible.
  2. During and after any exposure: record smoke density, duration, weather, vine stage, varieties and affected blocks.
  3. Before sampling: identify likely high-risk blocks, keep varieties separate and confirm laboratory and insurance requirements.
  4. Assess the lot: combine representative grape analysis with a micro- or nanofermentation and controlled sensory evaluation.
  5. At harvest: segregate suspect fruit, keep leaves out, cool fruit, consider hand harvesting where practical and plan skin contact and press-fraction separation.
  6. Before full production: use the combined evidence to choose a style, reject a lot, or process it separately; do not let one marker result dictate the entire decision.
  7. For finished wine: trial any reverse-osmosis or spinning-cone treatment on a small lot, monitor sensory quality over time and account for possible return of smoky character.

This sequence makes uncertainty manageable: it preserves evidence, limits cross-contamination and delays irreversible blending or processing choices until the lot has been tested in a form closer to the wine you intend to sell.
