Use a food thermometer to check a casserole’s center or thickest portion; a browned, bubbling top cannot confirm that the middle is safe. USDA FSIS lists 165 °F (73.9 °C) for casseroles and combination dishes. For casseroles and other dishes containing eggs, FDA guidance specifies 160 °F (71.1 °C), and USDA’s thermometer guidance also lists 160 °F for egg dishes. These are distinct recommendations, so identify which category applies rather than treating the temperatures as interchangeable.
Check the center with a food thermometer
Insert a food thermometer into the casserole’s center or thickest portion, ensuring the sensing area is inside the food. Read the temperature away from the surface and edge, which may heat differently from the middle. USDA FSIS advises checking egg dishes in several places to account for uneven heating.

- Use a food thermometer suitable for measuring food temperature; an instant-read thermometer is one option.
- Place its sensing area in the center or thickest portion of the casserole.
- For an egg dish, take readings in several places. If the readings differ, keep heating and check again until the applicable target is met throughout.
- Clean the probe with hot, soapy water before and after use, or follow the thermometer manufacturer’s cleaning instructions.
Which temperature applies?
Federal guidance gives different targets by food category. USDA FSIS says casseroles and other combination dishes must reach 165 °F (73.9 °C), measured with a food thermometer. FDA says casseroles and other dishes containing eggs should reach 160 °F (71.1 °C); USDA’s thermometer page also lists 160 °F for egg dishes.
Use the recommendation that matches the dish and guidance you are following. For a casserole containing poultry, USDA’s 165 °F casserole/combination-dish recommendation applies. Leftovers being reheated should reach 165 °F as well. Do not assume the 160 °F egg-dish entry replaces the separate 165 °F recommendation for casseroles and combination dishes.

Why appearance is not enough
A browned or bubbling surface does not show that the center has reached a safe temperature. USDA FSIS notes that egg casseroles and lasagne can brown on top before heating through. This matters especially when meat or poultry was only browned before being assembled into a casserole: the finished dish still needs to be heated thoroughly, particularly if it was refrigerated after assembly.
Look and texture can help judge recipe quality—for example, whether a center has set—but they are not universal safety tests. USDA FSIS’s guidance is direct: “You Can’t Tell By Looking. Use a Food Thermometer to be Sure!”

Reheating casserole leftovers
When reheating leftovers, bring the food to 165 °F (73.9 °C). USDA FSIS advises checking in several places because reheated food may not warm evenly. FDA likewise says cooked egg dishes served later should be thoroughly reheated to 165 °F.
