But the names overlap, and ingredients alone don’t settle the question. Look at how a recipe is built and whether you want neat portions or a spoonable center.
How do corn pudding and corn casserole differ?
Both are baked corn side dishes, and some cooks use the names interchangeably. As a practical tendency, casserole leans toward a sturdy, cornbread-like texture; pudding leans toward a soft, creamy set. Neither label has a universally fixed definition.

What recipe features should you compare?
- Texture and serving style: Is the baked center spoonable, or does it hold together when cut?
- Structure: Cornmeal or a corn muffin-style base can give a dish more body, but its presence does not automatically make it a casserole.
- Eggs and dairy: Milk, cream, and eggs can contribute to a softer, custard-like set. The proportions and other ingredients matter too.
- Corn: Notice whether whole kernels remain prominent alongside creamed corn or another base.
- Flavor: Seasoning is not a category test. Recipes can be savory or sweet; check the ingredients rather than assuming a required style.
Why ingredients don’t create a strict dividing line
Food Network’s casserole combines whole-kernel and creamed corn with cheddar, cornmeal, sour cream, chives, sugar, and baking soda. Its explanation says cornmeal absorbs moisture and helps make the result sturdy. Its pudding recipe, however, also includes cornmeal, along with butter, cream cheese, creamed and frozen corn, onion, milk, eggs, and sugar. That pudding is still described as creamy and soft.

USDA MyPlate offers another casserole example, made with cream-style corn, cornmeal, milk, egg, flour, and baking powder and baked in a 9-inch pan. Meanwhile, a USDA Food and Nutrition Administration recipe adapted from Aunt Sammy’s Radio Recipes Revised (1931) makes pudding with eggs, corn, melted butter, salt, pepper, and milk—without cornmeal—and bakes it in a water bath until set. Which one should you make?

Read the recipe description and ingredient list before relying on its title. A recipe can land between these textures, and the same ingredient—cornmeal, for example—can appear in either style.

What does “gooey” corn pudding mean?
