Pack cold lunches in the morning
- Start clean. Wash your hands and prepare food on clean surfaces. Keep raw foods separate from ready-to-eat foods to prevent cross-contamination. Do not reuse packaging, such as a resealable plastic bag, if it may have become contaminated. FoodSafety.gov notes that 97 percent of participants in a USDA test kitchen did not wash their hands properly; the cited article does not state the study year, sample size, or methods, so this is not a current population estimate. - Chill the food first. Pack perishables cold, not at room temperature. If you prepare the lunch ahead, refrigerate it overnight.
- Use insulation and two cold sources. Put the food in an insulated lunch bag with two frozen gel packs, or use a frozen water bottle or juice box as a cold source. Position them to keep the food cold. A lunch bag by itself does not provide the cold sources recommended by FoodSafety.gov. Its advice: “Keep perishable foods like deli meats in an insulated lunchbox with a cold source, such as a frozen gel pack, water bottle or juice box.” The school-meal guidance recommends two cold sources. - Refrigerate the packed lunch overnight if it is made ahead, then keep it cold during the trip to school.
At school: refrigerate if you can
If the school has a refrigerator, put the lunch in it promptly. FoodSafety.gov suggests leaving the lunch bag open in the refrigerator so cold air can circulate. If there is no refrigerator, keep the bag closed and packed with cold sources. There is no guaranteed safe number of hours for an unrefrigerated lunch without knowing its temperature, so do not treat a bag or ice packs as a promise that food will stay safe until lunch. Know when to discard a perishable lunch
The food-safety danger zone is 40°F (4°C) to 140°F (60°C). Perishable food should not remain unrefrigerated for more than two hours total, or more than one hour if exposed to temperatures above 90°F (32°C), such as in a hot car or outdoors. If either limit is exceeded, discard the food. Smell and taste cannot reliably determine whether food is safe; when in doubt, throw it out. A food thermometer can help check temperature, but it is not a substitute for safe chilling and storage. FoodSafety.gov’s temperature and time guidance explains the limits.
Keep soup and other hot food hot
For soup or chili, preheat an insulated food container by filling it with boiling water, then empty it. Add piping-hot food and close the container; keep it closed until lunchtime. The school-meal guidance says hot food should stay at or above 140°F (60°C). Use a container intended for hot foods, separate from the insulated bag and cold sources used for a cold lunch. Choose lunch gear for the job
When choosing an insulated bag, look for enough room for the meal and two cold sources, plus a surface or lining that is practical to clean. For hot meals, use an insulated food container designed to retain heat rather than relying on a lunch bag. These are selection considerations based on the safe-packing steps above, not results of product testing; no particular bag or pack guarantees food safety. Frozen water bottles and juice boxes can serve as alternatives to separate freezer packs.
