Use an instant-read food thermometer, not color or grill marks, to decide when barbecue is safe. Insert the probe into the center of the thickest part, begin checking before the expected finish, and remove the meat as soon as it reaches the applicable safe minimum. Give foods the required standing time, then keep cooked food hot or chill it promptly. This approach controls pathogens while limiting the extra heat that dries meat.
Safe internal temperatures for grilled meat
These are minimum internal temperatures, not estimates based on cooking time or surface appearance. The targets below come from USDA Food Safety and Inspection Service guidance updated in 2022. The temperature applies at the center or thickest portion of the food.

| Food | Minimum internal temperature | Required rest or handling |
|---|---|---|
| Beef, pork, lamb or veal steaks, chops and roasts | 145°F (63°C) | Rest for at least 3 minutes after reaching the temperature. |
| Ground beef, pork, lamb or veal | 160°F (71°C) | No visual doneness test substitutes for the thermometer reading. |
| All poultry, including ground poultry | 165°F (74°C) | Check the thickest portion; poultry must reach this minimum throughout. |
| Cooked meat while waiting to serve | 140°F (60°C) or warmer | Maintain this hot-holding temperature until serving. |
A smoker or grill used for smoking should be monitored separately from the food. USDA’s grilling guidance specifies an appliance air temperature of 225–300°F during the process. That range describes the cooking environment; it is not a replacement for measuring the meat’s internal temperature.

USDA states that using a food thermometer is the only reliable way to ensure food has reached a safe minimum internal temperature capable of destroying harmful microorganisms. Surface browning happens where the heat is strongest, while the center may still be below the required temperature. Conversely, meat can be safe before it develops the color or firmness you expect, so cooking by appearance alone can leave it dry.

Grill marks, a browned exterior, clear juices and a firm feel are sensory signs of doneness, not measurements of pathogen destruction. USDA’s “Doneness Versus Safety” guidance separates those two ideas: doneness is a quality judgment, while safety depends on sufficient time and temperature throughout the food. Use visual cues only after the thermometer confirms the applicable minimum.
The risk is not theoretical. A USDA thermometer page cites estimates of about 48 million foodborne-illness cases, 128,000 hospitalizations and 3,000 deaths each year in the United States. The same page reports that 21% of participants in a USDA study judged hamburger doneness with visual cues such as color or grill marks. A probe gives you information that the surface cannot.

- Wash your hands before handling food and again after touching raw meat or poultry.
- Put raw meat and poultry on a dedicated plate or tray. Keep a second, clean platter ready for food that is finished.
- Use separate cutting boards, plates and utensils for raw and cooked food. Do not return grilled meat to the plate that held it raw.
- Have clean tongs, a clean spatula and a clean thermometer available before cooking.
- Preheat the grill so food can be cooked continuously rather than sitting in a warm, partly cooked state.
USDA advises never partially grilling meat or poultry and then finishing it later. FDA outdoor-food guidance allows partial cooking only when the food goes immediately onto the hot grill to complete cooking, such as moving it straight from an indoor step to a home patio grill. If there will be a delay, cook the food fully in one uninterrupted session instead.
A safe, low-drying grill workflow
- Organize raw and cooked zones. Place raw items near the grill with their own utensils and keep the clean serving platter away from drips. Decide where the thermometer will be set down so its probe does not touch a contaminated surface.
- Preheat and start cooking. Bring the grill to the intended cooking condition. For smoking, watch the grill or smoker air temperature and keep it within the 225–300°F range specified by USDA. Put the food on once the grill is ready and continue cooking rather than pausing halfway.
- Estimate the finish, but do not trust the estimate. Cooking time changes with thickness, starting temperature, wind and the grill itself. Use the estimate only to know when to begin probing.
- Check early. USDA’s 2025 thermometer guidance recommends checking before the food is expected to finish. Early readings show how quickly the center is heating and let you stop at the safe minimum instead of leaving the meat over the fire while waiting for a visual sign.
- Probe the correct location. Insert an instant-read probe into the center of the thickest portion. For a thin burger or boneless chicken breast, insert from the side so the sensing area reaches the center rather than stopping near the hot surface.
- Confirm the reading. If the piece is unusually thick or shaped unevenly, check more than one location and use the lowest reading as the decision point. A hot spot can reach the target while a cooler center remains below it.
- Remove promptly at the applicable minimum. Taking the food off once the safe target is reached limits additional heat exposure and reduces unnecessary drying. Do not keep cooking solely to produce darker marks.
- Allow any required standing time. FDA explains that standing time completes cooking for foods that require it. For the whole-cut beef, pork, lamb and veal category in the table, wait at least three minutes after the 145°F reading before serving.
- Move the food to the clean platter. Keep the serving utensil and platter separate from the raw-food equipment, then maintain the food at the hot-holding temperature if it will not be eaten immediately.
- Chill leftovers on schedule. Refrigerate promptly under the limits described below; do not leave a platter out while the grill is being cleaned.
How to use an instant-read thermometer without overcooking
Choose the right tool for quick checks
An instant-read digital food thermometer is the most useful tool for grilling because it gives a fast reading at several points without requiring the lid to remain open. It is especially practical for thin burgers, boneless chicken breasts and other foods whose safe window is short. A leave-in or wireless probe can be useful for long smoking sessions, but the essential safety check is still the internal temperature of the food, not the air reading alone.
Keep the thermometer accessible during cooking rather than waiting until the exterior looks finished. A probe that is stored dirty or placed on the raw-meat plate can transfer contamination, so set it on a clean surface between checks and clean it according to the manufacturer’s food-contact instructions.

Reach the coldest part
The sensing area must be in the middle of the thickest section. In a thick steak or roast, insert from the top or side toward the center. In thin foods, approach from the side so the tip passes through the edge and ends in the center. Avoid touching bone, the cooking grate or a fat pocket, since those locations can produce a misleading reading. When a shape is irregular, make readings in the thickest and thinnest-looking areas and act on the coolest result.
Read early and stop at the minimum
Begin checking before the predicted finish. If the first reading is below the target, close the grill and check again after a short interval rather than leaving the lid open. As soon as the center reaches the relevant minimum, remove the food and apply the required standing time. This sequence gives you a safety margin without the prolonged cooking that turns a correctly cooked piece dry.
Managing grill heat while smoking or cooking indirectly
When smoking, monitor two separate measurements: the air temperature in the grill or smoker and the food’s internal temperature. Keep the appliance in USDA’s 225–300°F process range, but use the internal target in the table to decide when the meat is safe. Air temperature can fluctuate with weather, fuel and lid openings, so it cannot establish that the center has reached a pathogen-killing temperature.

Opening the lid repeatedly releases heat and lengthens cooking. Instead, prepare the thermometer, open the grill briefly, take the reading from the thickest portion and close the lid. A quick, planned check is less likely to create the extra cooking time that leads to overdone edges.

Raw juices can contaminate cooked food even when the meat itself eventually reaches a safe temperature. Keep raw and cooked items on separate platters from the moment they leave the refrigerator until leftovers are stored. Use one set of tongs or spatulas for raw food and a clean set for the finished food, or wash the utensils thoroughly before reuse. The same separation applies to cutting boards, knives and serving plates.
Do not brush cooked food with sauce using a brush that touched raw meat unless the brush has been washed first. Keep hands clean when switching tasks, and wipe preparation surfaces after raw-food contact. These practices follow the CDC’s Clean, Separate, Cook and Chill framework and complement, rather than replace, the thermometer check.

Hold, serve and refrigerate safely
If cooked meat must wait for guests, keep it at 140°F (60°C) or warmer. Use a clean platter and protect the food from contact with raw items. Hot holding is a serving condition; it does not change the minimum temperature required during cooking.
Refrigerate leftovers within two hours of cooking. When the outdoor temperature is above 90°F, the limit is one hour. USDA advises discarding food that remains out beyond the applicable limit rather than trying to make it safe by reheating. Plan serving quantities so only the food likely to be eaten stays outside, and move the rest to refrigeration promptly.
What to do when the reading or appearance is confusing
| Situation | Safe response |
|---|---|
| The outside is deeply browned, but the center reading is low. | Continue cooking and recheck the center. Browning and grill marks do not prove that the inside has reached its minimum. |
| A thin burger or chicken breast jumps above the target. | Remove it immediately and use the applicable standing time. Thin food can gain heat quickly, so early checking is especially important. |
| Two spots show different temperatures. | Probe again in the thickest area and use the coolest credible reading. Uneven thickness can leave one section under the target. |
| The food looks pale but the center has reached the table’s minimum. | Remove it rather than cooking for color alone. Appearance is a quality preference, not a safety measurement. |
| You forgot to check until the estimated finish. | Insert the probe now. If the reading is below the applicable minimum, continue cooking and check again; if it has reached the minimum, remove it and follow the required rest. |
| You partially grilled the food and need to wait before finishing. | Do not hold it for later cooking. USDA says not to partially grill and finish later; FDA’s exception is immediate transfer to the hot grill for completion. |
| There is no thermometer available. | Color, firmness and grill marks cannot reliably establish safety. Obtain a food thermometer rather than relying on a visual guess. |
A practical checklist for every barbecue
- Clean hands, utensils, boards and platters are ready.
- Raw and cooked foods have separate containers and tools.
- The grill is preheated and food will be cooked continuously.
- The thermometer is clean, accessible and inserted into the center of the thickest part.
- Thin foods are probed from the side.
- Internal temperature is checked before the expected finish.
- The applicable minimum in the table is reached before removal.
- Required standing time is observed.
- Finished food is kept at 140°F or warmer while waiting.
- Leftovers are refrigerated within two hours, or within one hour above 90°F.
Following this sequence separates the two decisions that cooks often confuse: safety is established by the measured internal temperature, while preferred browning and texture are adjusted afterward. Checking early and removing at the minimum is the simplest way to protect guests without sacrificing moisture.
