For a classic baked potato with a light, fluffy interior, choose a russet. Russets are high in starch and relatively low in moisture, while red and yellow potatoes are waxier and better suited to recipes where the potato should hold its shape.
Which potatoes make the fluffiest baked potatoes?
Choose russets, sometimes sold as “baking potatoes,” “bakers” or “chef potatoes.” Their high-starch, relatively low-moisture flesh becomes dry and mealy when baked, creating the familiar fluffy interior. The Washington State foodservice guide describes Washington russets as averaging 20–24% solids; that figure applies to the guide’s Washington context, not every russet sold at retail (Washington State foodservice guide).

Named baking varieties include Russet Burbank and Russet Norkotah. The Washington guide lists both, and the Idaho Potato Commission identifies both as suitable for a light, fluffy baked texture (Idaho Potato Commission potato types). The available guidance does not establish that one is universally better; size, oven, and personal preference can affect the result.

How do russets compare with red and yellow potatoes?
| Potato type | Starch and moisture | Baked texture and best use |
|---|---|---|
| Russet, including Burbank or Norkotah | High starch; relatively low moisture | Dry, fluffy, mealy interior; the classic baked potato choice. |
| Red or yellow | Low to medium starch; more moisture | Waxy and more likely to hold its shape; useful in salads, stews, and braises. |
The distinction is about the texture you want, not a simple color rule. Kansas State University Extension explains that potato choice depends on how the potato will be cooked and used (Kansas State University Extension).

What should you look for when buying?
- Choose firm potatoes without obvious damage. The USDA U.S. No. 1 grade includes firmness and fairly good shape among its standards; grade is a visible-quality measure, not a guarantee of fluffy texture (USDA U.S. Standards for Grades of Potatoes).
- Pick similar sizes for a batch. Larger potatoes take longer to bake, so similarly sized ones are more likely to finish at roughly the same time.
- Choose size to suit the meal. A large potato makes a substantial serving; smaller ones can be easier to serve alongside other dishes. The Washington foodservice guide advises matching size to intended use.
One Washington industry guide reports that Washington russet varieties average 20–30 percent solids (Washington Potatoes). That is a separate, source-specific range from the 20–24% figure above; neither should be treated as a universal value for all retail russets.

How should you bake them for fluffy centers and crisp skin?
- Group potatoes by size. This helps them cook more evenly. Expect larger potatoes to take longer; the Washington guide gives no single timing that applies to every size and oven.
- Leave them unwrapped for crispier skin. Foil wrapped around a potato before baking traps steam, increases cooking time, and softens both skin and flesh.
- Check for doneness rather than relying only on a timer. The Washington guide gives fork tenderness and an internal temperature of 210°F as cues. Treat that temperature as the guide’s recommendation, not a guarantee of cooking time across ovens and potato sizes.
- Use a baking sheet if convenient. The guide recommends one for easier handling and turning. Foil added after baking can retain heat, but it also softens the skin.
