Do these 3 things before closing this tab:
1Repair Windows errors before they cause bigger problems2Fix the driver behind crashes, sound loss and screen glitches3Clear out junk files and repair common Windows errorsFor crisp skin and a fluffy center, bake a dry, fork-pierced russet lightly coated with oil and salt, uncovered and directly on the oven rack. Set a conventional oven to 425°F (220°C) and allow about 50–60 minutes, then check the largest potato for tenderness rather than relying on the clock alone.
What you need
- Russet baking potatoes, preferably similar in size so they finish at roughly the same time
- A little oil, enough to coat the skins lightly
- Salt
- A fork; an instant-read thermometer is optional
How to bake it
- Heat the oven. For a conventional oven, set it to 425°F (220°C). If using convection, set it to 400°F (about 205°C).
- Wash and dry the potatoes. Scrub off dirt, then dry the skins thoroughly; starting with a dry surface helps the skin crisp.
- Pierce the skins. Prick each potato several times with a fork to help prevent it from bursting during baking.
- Oil and season. Rub each potato with a light coating of oil and salt the skin.
- Bake uncovered. Place the potatoes directly on the oven rack, with space around them for heat to circulate. Put a baking sheet on a lower rack if you want to catch any drips.
- Check for doneness. Begin checking around the estimated finish time. A fork should slide easily into the center. If using a thermometer, the Idaho Potato Commission lists 208–211°F (about 98–99°C) as a done range.
- Serve promptly. Cut each potato open just before serving. Press the ends toward the center, then lift and fluff the flesh with a fork.
Conventional vs. convection oven
| Oven type | Temperature | Published time guidance |
|---|---|---|
| Conventional | 425°F (220°C) | About 50–60 minutes for the basic recipe; general guidance gives about 55–60 minutes. |
| Convection | 400°F (about 205°C) | About 50–55 minutes. |
These are Idaho Potato Commission estimates, not guarantees. Potato size and oven performance affect the finish time, so use the fork check—and the thermometer range if you want a numeric check—to decide when they are done. See the Commission’s baking guidance and basic baked-potato recipe.

Why bake it uncovered instead of in foil?
Uncovered baking lets the skin stay dry as it cooks, which supports a crisp exterior and fluffy interior. The Idaho Potato Commission recommends placing the potato directly on the oven rack for that texture. Foil can keep a baked potato warm briefly, but it traps moisture and softens the skin, so it works against crispness. For the Commission’s explanation, see its guidance on baking potatoes.
What to do if the potato is not done
If a fork meets resistance in the center, return the potato to the oven and check again after a short interval. Larger potatoes may need longer than the published estimates. Judge the center by tenderness, not by whether the skin looks browned.
