These are recipe-backed starting points, not a tested ranking.
Choose a flavor profile to suit the broccoli
| Broccoli preparation | Vinaigrette direction | Flavor balance |
|---|---|---|
| Steamed | Dijon mustard, apple cider or white-wine vinegar, olive oil, a little honey and garlic | Tangy and savory, with a small sweet note |
| Roasted florets | Lemon juice and zest, grain mustard, garlic and optional hot pepper | Bright and sharper, with optional heat |
| Roasted broccoli or potatoes | Broccoli-stem vinaigrette with lemon, olive oil, grain mustard, garlic and hot pepper; optional anchovy paste | More savory and aromatic |
The steamed combination follows an Aamanns recipe, while the lemon-and-grain-mustard direction draws on a James Beard Foundation broccoli-stem vinaigrette, which it also suggests for roasted potatoes or broccoli florets. Neither source establishes that one dressing is better in a controlled tasting.

Start with an oil-to-acid ratio, then adjust
A practical starting point is about three parts oil to one part acid. It is a cooking convention, not a scientific standard: University of Nebraska–Lincoln Extension describes classic French vinaigrette as typically three to four parts oil to one part acid, while USDA MyPlate uses six tablespoons oil to four tablespoons vinegar. A James Beard formula reproduced by the James Beard Foundation uses six tablespoons olive oil to one and a half tablespoons vinegar.
These recipes show why the ratio is a starting point rather than a rule. Use less oil for a sharper dressing or more for a rounder, milder one. Choose vinegar or lemon juice according to the aroma and tartness you prefer; University of Maryland Extension’s recipe allows either vinegar or lemon juice.

Mix a basic dressing and make it your own
- Measure: Combine about three parts olive oil with one part vinegar or lemon juice in a small jar. For a simple reference recipe, USDA MyPlate specifies six tablespoons oil, four tablespoons vinegar, salt, pepper and a quarter teaspoon mustard.
- Emulsify: Tighten the lid and shake, or whisk with a fork. A specialty tool is unnecessary.
- Taste and tune: The Associated Press’s August 21, 2023, vinaigrette guidance advises adding vinegar if the dressing tastes too oily, oil if it is too tart, and salt or mustard if it seems bland. Add garlic, herbs, chile or a little honey if they suit the broccoli and the flavor you want.
Dijon or grain mustard is useful but optional. Mustard adds flavor as well as helping the ingredients combine; the amount can vary with the food. James Beard’s guidance, reproduced by the James Beard Foundation, puts it this way: “Celery salad, for instance, will take more mustard than a green salad.”

For the steamed version, Aamanns combines Dijon mustard, honey, apple cider or white-wine vinegar, olive oil, a little garlic, salt and pepper in a lidded jar and shakes it before seasoning to taste. Steam broccoli until tender but still firm and bright green; the recipe gives about five minutes, depending on the size of the pieces. Remove it from the hot pan, dress it, and serve promptly.
