Electric Kettle Temperature Settings: Best Heat Levels for Tea and Coffee

Use lower water temperatures for delicate teas, hotter water for black tea and herbal infusions, and 196–205°F as a coffee starting range. Brewing guides vary, so treat presets as starting points and adjust to taste.

There is no single best kettle temperature for every tea or coffee. As a practical starting point, brew green and white tea below boiling, use hotter water for oolong, and bring black tea and herbal infusions to a boil. For coffee, try 196–205°F (92–96°C), then adjust the recipe to taste.

Best starting temperatures for tea and coffee

These are starting points, not universal rules. Brewing guides differ, especially for white and oolong tea; use the tea, recipe, and flavor you want to guide adjustments.

Drink Starting temperature Practical note
Green tea 175–180°F (79–82°C) Below boiling. Guides range from about 176°F to 185°F.
White tea 175–185°F (79–85°C) KitchenAid suggests 175–180°F or 185°F, while the Tea and Herbal Association of Canada recommends 185°F.
Oolong tea 185–200°F (85–93°C) Recommendations vary from 185°F to about 195°F, so adjust to the tea and taste.
Black tea 203–212°F (95–100°C) Use near-boiling or boiling water.
Herbal infusion 212°F (100°C) The reviewed guides recommend a full boil.
Coffee 196–205°F (92–96°C) KitchenAid’s suggested range; coffee method and extraction also matter.

The Tea and Herbal Association of Canada recommends 185°F for white, green, and oolong tea, while KitchenAid provides distinct settings by tea type. Those differences are a reason to treat preset labels as guidance rather than a strict standard. How temperature and steep time work together

Water temperature is one part of tea brewing, alongside the amount of tea and how long it steeps. The Tea and Herbal Association of Canada recommends starting with fresh-drawn cold water, bringing it to a rolling boil, then letting it cool to the desired temperature; it also recommends warming the teapot.

Its suggested steep times are 2–5 minutes for white, 1–3 for green, 2–3 for oolong, 3–5 for black, and 3–6 for herbal tea. KitchenAid’s Precision Kettle guide gives somewhat different times: 1–3 minutes for green, 3–5 for white and oolong, 4–5 for black, and 5–7 for herbal tea. These are also reference points, not a single agreed schedule. Tea and Herbal Association of Canada brewing guidance; KitchenAid Precision Kettle guide.

What temperature does coffee need?

KitchenAid suggests 196–205°F (92–96°C) for coffee. That is a useful starting range, but temperature alone does not determine the result: grind, dose, brew time, water flow, extraction, and brew strength all affect the cup.

A Specialty Coffee Association summary of drip-coffee studies reports that temperature changes alone had little sensory impact when total dissolved solids (TDS) and percent extraction (PE) were held similar. The tested water-temperature range was 87–93°C (about 189–199°F), and the brewing process was adjusted to achieve similar extraction profiles. The reported finding applies to those controlled drip-coffee conditions; it does not establish that temperature is unimportant for every coffee method or recipe. Using a kettle without temperature control

A variable-temperature kettle makes it easier to select and repeat a lower temperature without waiting for boiled water to cool, but it is not essential. If your kettle only boils, let the water stand briefly before pouring for teas that call for lower temperatures, and use a thermometer if you want a more repeatable result.

If you are choosing a kettle, compare its temperature range and increments or presets, capacity, keep-warm function, pour spout if you make pour-over coffee, and scale-filter design. Temperature control is most useful when you regularly brew drinks at different temperatures; a simpler kettle may suit someone who mainly wants boiling water.
