Change the color for new handwriting

In the pen options, tap the color you want. You can also adjust the pen type and line thickness in this area.

Write in the note. The selected color is used for strokes you add next.

Samsung’s Galaxy guidance places color, pen type, and line thickness in Pen mode. Toolbar labels and positions can differ by device and software version, so if you do not see the same icon, open the note’s pen or drawing tools. Samsung’s guide to using Notes on Galaxy devices
Save a pen color and style for reuse
If your version of Samsung Notes offers a favorite-pen control, use it to save a pen configuration. Samsung documents favorite pens with a selected pen type, color, and thickness; availability and controls can depend on the device and S Pen support. Samsung Galaxy Z Fold6 handbook

Change the color of handwriting already in the note
Switching the active pen color does not change strokes already on the page. To recolor existing writing, select the relevant handwriting, then choose Change style and adjust its color. Pen color and page color are different settings
Pen color changes the ink strokes, not the note’s background. To change the page appearance, look in the note-style or background settings instead. Samsung documents background color separately from pen options. Samsung’s instructions for note backgrounds and templates

Samsung Notes on PC has its own pen-mode controls, so the Galaxy phone or tablet toolbar instructions may not match your screen. Open the note’s pen tools to find color options. Samsung says a supported touchscreen PC can accept handwriting from a stylus or a finger, so an S Pen is not inherently required to change pen color.
