Apple cider vinegar is made by fermenting apple juice first into alcohol and then into acetic acid. “Fruit vinegar” usually means vinegar made from another fruit, but the term does not have one universal legal definition. For cooking, compare the fruit named on the bottle and choose the flavor that suits the dish; for pickling or canning, follow a tested recipe and use vinegar with the acidity it specifies.
What is the difference between apple cider vinegar and fruit vinegar?
The main difference is the fruit used as the starting material. U.S. Food and Drug Administration (FDA) labeling guidance describes cider or apple vinegar as the product of alcoholic and subsequent acetous fermentation of apple juice. It describes grape or wine vinegar in the same way, using grape juice as the source. FDA guidance on vinegar definitions does not establish “fruit vinegar” as one universal U.S. legal category.

The term can have a more specific meaning in other jurisdictions. A Philippine FDA draft guideline defines fruit vinegar as vinegar made from fermented juice of one or more fruits other than apple. That is a draft, jurisdiction-specific definition—not a global rule. Check the bottle’s ingredient and product wording rather than assuming every label uses the term identically.

Vinegar formation commonly involves two fermentation stages. First, yeast converts fruit sugars into alcohol; then acetic-acid bacteria convert the alcohol into acetic acid. The FDA’s descriptions explicitly identify both stages for apple and grape vinegars. The named fruit tells you the starting source, but it does not by itself tell you every detail of the finished product’s processing or taste.

Vinegar is also not simply acetic acid diluted with water. FDA policy says diluted acetic acid is not vinegar and should be labeled by its own name. FDA policy on vinegar and diluted acetic acid also notes volatile components detected in vinegar samples.
How do their flavors compare?
The fruit source is a useful starting point: apple cider vinegar begins with apples, while a grape or other fruit vinegar begins with the fruit named for it. But the sources available do not establish that apple vinegar is always sweeter, milder, or more intense than other fruit vinegars. Nor is there a standardized, controlled taste comparison that supports a universal ranking. Flavor depends on the particular product.

When comparing bottles, use these practical cues:
- Fruit source: Look for the named fruit or other fermentation substrate.
- Product description: Check whether the vinegar is filtered, unfiltered, blended, or otherwise formulated.
- Acidity: Read the stated acidity, particularly if the vinegar is for preserving.
- Color and taste: Consider whether the actual bottle’s color and flavor suit the dish; these are product-level characteristics, not standardized ratings.
- Intended use: Match the vinegar to a dressing, marinade, sauce, finishing touch, or tested preserving recipe.
Which one should you use in cooking?
For everyday cooking, either type can add acidity to salad dressings, marinades, sauces, or a finished dish. Choose according to the source-fruit character and the flavor of the specific bottle. A recipe may call for a particular vinegar for its taste, but the source material here does not establish that one variety is universally required for a given dish.
Can fruit vinegar be used for pickling or canning?
Only use vinegar that meets the acidity specified in a tested preservation recipe. University of California Agriculture and Natural Resources advises using vinegar labeled 5% acidity for home food preservation and warns against using homemade vinegar or vinegar of unknown acidity for pickling. See its home food preservation guidance.
Do not dilute or reduce the vinegar in a preservation recipe to make the result taste less sour. If you want a milder flavor, use the recipe’s safe flavor-adjustment options rather than changing its acid balance.

FDA’s 1995 labeling guidance says the vinegar varieties listed there should contain 4 grams of acetic acid per 100 mL at 20°C. It also discusses a 4% minimum for labeling diluted vinegar and says the actual acid strength must be reported. Those figures belong to the scope of that FDA labeling guidance; they are not a substitute for a preservation recipe’s acidity requirement.

The 5% acidity recommendation from UC ANR concerns home food preservation. The two figures come from different guidance and contexts, so do not treat them as interchangeable rules. For preserving, follow the tested recipe and its specified labeled acidity.
