Water can erupt from a microwave-heated cup when it becomes superheated: hotter than its usual boiling point without visibly bubbling. Moving the cup or adding something such as instant coffee can trigger sudden boiling and splash hot water. The danger is scalding from hot liquid—not an explosion caused by microwave radiation.
Why microwave-heated water can erupt
Under ordinary conditions, boiling water forms bubbles you can see. But water heated in a microwave can pass its conventional boiling temperature while showing little or no visible boiling. USDA Food Safety and Inspection Service (FSIS) describes that reference temperature as 212 °F. This is a boiling-point reference, not a statistic about how often eruptions occur.

When water is superheated, a small disturbance may set off rapid, forceful boiling. Picking up or moving the cup can be enough; adding instant coffee, tea, or gelatin may also trigger an eruption. The liquid can splash out suddenly even though it looked calm moments earlier.
The agencies identify heating water by itself in a clean cup as a circumstance in which superheating can occur. USDA FSIS also mentions a very clean vessel, including one just taken from a dishwasher, and room-temperature water. These are described conditions, not a prediction that a particular cup will erupt.

How to reduce the risk
Follow your microwave’s manual and heating times
The FDA’s primary advice is to read and follow the precautions and recommended heating times in the manual for your specific microwave. Do not heat water or other liquids longer than the manual recommends.
Use cookware made for microwave use
Choose a vessel labeled or otherwise specified by its manufacturer as suitable for microwave use. The oven manual should govern whether a particular utensil can safely remain in the microwave during heating.

Consider USDA FSIS’s additional precautions
USDA FSIS lists several measures that may reduce the risk of eruptive boiling. They are precautions, not guarantees:
- Use a vessel with sloping walls, such as a measuring cup.
- Stir the liquid occasionally while it heats, if you can do so safely and in accordance with the appliance manual.
- Leave a spoon in the vessel only if it is microwavable and the manual permits it.
- Add a pinch of instant coffee, a tea bag, or gelatin at the start or halfway through heating, if appropriate for what you are preparing.
Neither the FDA nor USDA FSIS says that any one of these steps makes an eruption impossible. Follow the manual first, and do not rely on an added ingredient or utensil as a substitute for its heating-time guidance.

If a cup of water looks calm after heating
Do not treat a lack of visible bubbles as proof that the water cannot erupt. Avoid adding an ingredient or suddenly moving a cup that may be superheated. The agency guidance focuses on avoiding excessive heating and following the appliance manual; it does not establish a safe way to test whether a particular cup is superheated.

The FDA says it has received past reports of serious skin burns or scalding to hands and faces from hot water erupting from cups after microwave overheating. The FDA and USDA FSIS pages cited here do not quantify how often this happens or give an individual’s probability of experiencing it, so a frequency estimate would be unsupported.

Microwave energy is absorbed and converted to heat, according to the FDA. The eruption is a hot-liquid hazard, not evidence that the water has become radioactive.
