Prepped salad greens wilt because they lose water through their leaves. Warmth, dry air and moving air speed that loss, while cutting and rough handling make leaves more vulnerable to deterioration. For loose greens, wash only when needed, dry them thoroughly, then refrigerate them promptly in a clean container with a dry paper towel and room for air circulation. Sealed greens labeled washed or ready-to-eat generally do not need another rinse.
Why prepped greens lose their crispness
Leaves stay firm partly because their cells contain water. As water escapes from the leaf surface, greens become limp, shriveled and less crisp. Temperature, humidity and air movement affect how quickly that happens; cooling slows respiration and water loss. The University of Nevada, Reno Extension explains these factors in its guide to storing fresh produce.

Cutting and rough handling can accelerate quality loss. Cutting exposes internal fluids and nutrients and disrupts the leaf’s protective surface, creating more opportunity for deterioration. UC Davis reports higher respiration in cut lettuce than in intact heads in its postharvest comparison, but that finding does not establish a household shelf life for every salad mix. Handle leaves gently and keep them cold.
How to prep and store loose greens
- Sort and rinse. Remove damaged or spoiled leaves. Rinse loose greens under clean running water; do not use soap, detergent, bleach or commercial produce wash. The FoodSafety.gov produce-cleaning guidance advises against washing produce with soap or detergent.
- Dry thoroughly. Use a salad spinner, clean kitchen towel or paper towels to remove surface water. Excess liquid can pool in storage and encourage spoilage. Washing far ahead and putting wet greens away can also promote bacterial growth.
- Store loosely in a clean container. Put the greens in a clean, sturdy glass or plastic container lined with dry paper towels. Avoid compressing them; leave some room for air circulation. Replace the towel if it becomes damp. Oklahoma State University Extension describes this approach in its fresh-produce storage advice. The towel absorbs excess surface moisture; it does not prevent spoilage or make greens safe indefinitely.
- Refrigerate promptly. Keep greens cold rather than on the counter, and do not freeze them. USDA Agricultural Research Service material identifies salad greens as especially susceptible to water loss and recommends storing them as cold as possible without freezing. FDA guidance for food establishments recommends holding cut leafy greens at or below 41°F (5°C); that is commercial guidance, not a complete household storage standard.
What to do with sealed, ready-to-eat greens
Buy packaged greens from a refrigerated case, keep them refrigerated and follow the package directions and use-by or expiration date. If the label says washed, pre-washed, triple-washed or ready-to-eat, do not rinse them again. Rewashing adds handling and possible cross-contamination without being required by the cited consumer guidance. A rinse cannot restore safety to a damaged, contaminated or out-of-date package.

How long prepared greens keep
Health Canada advises refrigerating leafy greens for up to seven days and discarding leaves that are wilted or brown. That is general consumer advice, not a guarantee for every variety, cut, package or temperature history. For sealed ready-to-eat greens, follow the package date and directions. There is no single reliable shelf-life figure for all prepared greens.
Freshness and safety are not the same. Limpness and browning are quality warnings; Health Canada advises discarding wilted or brown leaves. Conversely, the FDA warns that greens exposed to unsafe temperatures can look acceptable even when pathogens have increased. Appearance and smell alone cannot establish that greens are safe.

If greens have gone limp
A brief cold-water refresh may help restore some crispness to leaves that have lost water, but it does not reverse spoilage or make unsafe greens safe. Dry the leaves again before serving or returning them to storage. Discard leaves that are slimy, rotten or notably brown; do not rely on refreshing them to salvage spoiled greens.
