A broiler pan’s slotted top is a raised grid: it holds food above the lower pan while letting fat and juices drain through. Use it when broiling foods that produce drippings and your oven’s instructions call for a broiler pan and grid. The design helps separate food from the drippings, but it does not remove all fat or guarantee smoke-free cooking.
How the slotted top works
The upper grid supports food closer to the broiler’s radiant heat. Its openings let rendered fat and juices fall into the lower pan rather than pooling around the food. GE describes the grid as allowing grease and juices to drain into the pan base; its owner-manual guidance says the rack keeps meat above the drippings. Whirlpool likewise describes its pan-and-grid arrangement as draining juices away from food and helping limit spatter and smoke. These are manufacturers’ descriptions of intended function, not independent performance measurements. GE support, GE owner-manual guidance, Whirlpool guidance.

How much smoke or spatter you get also depends on the food’s fat content, its position, the oven design, and whether the lower pan is dirty. The sources do not quantify a reduction in smoke, spatter, or fat.

Use the pan and grid when broiling food that releases fat or juices, particularly when your appliance manual recommends them. GE’s general guidance recommends a broiler pan and grid so fat can drain; food-specific rack positions are in the oven manual. Whirlpool advises centering the pan, trimming excess fat to reduce spattering, and removing the pan when you take out the food so drippings do not bake onto it in the hot oven. Follow your own manual for broil setting, rack position, and door position: these can vary by model. Whirlpool broiler-pan guidance, GE broiling guidance.

Foil can block drainage
Unperforated foil across the grid prevents drippings from falling through as intended. Whirlpool advises against covering the grid with foil for proper drainage. GE says that if foil is used on the grid, it should be fitted tightly and slit to line up with the openings. Instructions may differ by appliance, so follow the manual for your oven and pan. What to use if you do not have a broiler pan
For some broiling tasks, Whirlpool lists a shallow metal pan with a baking rack or a cast-iron skillet as alternatives. A skillet alone does not provide the same raised-grid drainage. Before substituting, check that the cookware is rated for broiler heat, fits safely in the oven, and suits the recipe. Whirlpool warns against using glass cookware under broiler heat. Cleaning and handling
Remove the pan promptly after broiling rather than leaving greasy drippings in a hot oven, where they can bake on and become harder to clean. GE advises draining fat, letting the pan and rack cool slightly, and washing them with cleaners approved for the parts. GE cautions against putting metal broiler pans and racks through the oven’s self-clean cycle because they may warp and residual grease could ignite at self-clean temperatures. Its advice differs for porcelain-enamel parts, so check the instructions for the exact pan and oven. GE broiler-pan cleaning guidance, Whirlpool handling guidance.
