Glow berries in Minecraft are food, a fox-breeding item, and the planting item for cave vines. A cave-vine block bearing berries emits light, so leave berries growing on the vine if you want it to brighten a build.
What can you do with glow berries?
Eat them
Glow berries are edible. Minecraft’s Bedrock changelog says they are “as nutritious as Sweet Berries”; it does not give a numerical food value in that statement. Minecraft Changelog 1.16.220.52

Lure and breed foxes
You can use glow berries to lure and breed foxes, and foxes eat them. These uses are described in Minecraft’s Java Snapshot 21w05b and Bedrock changelog.

Grow cave vines
Place a glow berry on the underside of most solid, cube-shaped blocks to grow cave vines beneath them. The vines grow downward, are climbable, and may produce berries. Bone meal can also make berries grow on a cave vine. Minecraft introduced these features in its 21w05b Java snapshot notes and Bedrock changelog.

Light a build
A cave-vine block that has glow berries emits light, according to the Bedrock changelog. The documented light source is the berry-bearing vine block, not a glow berry held as an item. For a lit hanging vine, leave its berries in place rather than harvesting them all. Minecraft Changelog 1.16.220.52
Where do glow berries grow naturally?
Look for them in lush caves. Minecraft Help describes lush caves as caverns with moss, azalea bushes, cave vines, glow berries, dripleaf plants, and spore blossoms. Minecraft Help: All Biomes in Minecraft
