Yes—you can heat and dry material in a vacuum. A vacuum oven heats a sample while lowering the chamber pressure; the reduced pressure lets moisture evaporate at a lower temperature, while heat reaches the sample mainly through contact with heated shelves and through radiation. Vacuum drying is not the same as freeze drying: freeze drying starts with frozen material and removes ice as vapor.
How do you dry something in a vacuum?
Vacuum drying usually removes liquid moisture by evaporation at reduced pressure. As pressure falls, water’s boiling temperature falls too, so moisture can evaporate at a lower material temperature than it would at atmospheric pressure. That can help when a material is sensitive to heat, though the appropriate pressure, temperature, and duration depend on the material and equipment. ASHRAE’s discussion of industrial drying systems describes this lower-boiling-point principle.

In specialized work, vacuum drying can also remove trapped fluids from complex parts. ISO 14952-5:2003 covers drying cleaned space-system fluid components and says vacuum drying may remove entrapped fluids from intricate parts when ordinary purging has not worked. ISO reports the standard was reviewed and confirmed current in 2026.
Can you heat things in a vacuum?
Yes. Removing most of the gas reduces ordinary convection—the heat transfer that occurs when circulating air carries energy through a conventional oven—but it does not eliminate heat transfer. Heat can reach a sample through contact with heated surfaces and by radiation. As Sheldon Manufacturing’s vacuum-oven operating manual puts it: “In a vacuum oven, heat transfer takes place in part through direct infrared radiation. A significant portion, however, takes place through conduction.”

This makes contact and setup important. A sample resting on a heated shelf can receive substantial heat by conduction; a sample with little or no shelf contact may heat differently. The chamber’s displayed temperature is not automatically the sample’s temperature. In the Sheldon manual, the indicated temperature may shift during pump-down as the measured environment and thermal distribution change, so measurement and interpretation are specific to the process and instrument.
How does a vacuum oven work?
A vacuum oven combines a sealed chamber, heater, temperature controls, vacuum connections, and shelves. The operator loads the material, closes the chamber, reduces pressure with a compatible vacuum system, and controls heating according to the equipment manual and the material’s requirements. Manufacturer designs vary: a documented Thermo Scientific design uses radiant warm-wall heat around the chamber and aluminum shelves that conduct heat to the load. Thermo Fisher’s operating manual describes the intended controlled drying use and the equipment’s temperature controls.

What is the difference between vacuum drying and freeze drying?
The key difference is the material’s state and the phase change used to remove water. Vacuum drying commonly evaporates liquid moisture at reduced pressure. Freeze drying—also called lyophilization—freezes the product first, then removes ice directly as vapor under vacuum. The U.S. Food and Drug Administration describes three stages: freezing, primary drying (sublimation), and secondary drying (desorption of remaining water). FDA’s 1993 lyophilization inspection guide outlines those stages.

| Method | Starting state and water removal | What to keep in mind |
|---|---|---|
| Vacuum drying | Typically removes liquid moisture by evaporation at reduced pressure. | Can allow drying at a lower temperature than atmospheric-pressure drying; results depend on the material and process. |
| Freeze drying | Starts with frozen material; ice is removed by sublimation, followed by secondary drying. | Useful for some heat-sensitive materials, but ASHRAE characterizes the process as slow and expensive. A cold condenser or desiccant captures or absorbs vapor. |
For food, USDA FSIS describes frozen food placed in a special vacuum cabinet, where ice becomes vapor without first becoming liquid. Freeze drying is not a food-safety sterilization step; FSIS says freeze-dried food must be packaged in moisture-proof, hermetically sealed containers. USDA FSIS’s shelf-stable food guidance explains the packaging point.
Which method is appropriate for wet paper records?
For wet records, vacuum freeze drying and vacuum thermal drying are not interchangeable. National Archives guidance says freezing immobilizes water and can help limit movement of soluble media; coated paper is less likely to stick during freeze drying. By contrast, ordinary vacuum thermal drying can distort paper and encourage sticking or movement of soluble inks. These findings concern preservation of records and should not be treated as guarantees for other materials or industrial processes.

A vacuum oven is both heated equipment and a chamber exposed to external atmospheric pressure. Use the model-specific manual, stay within the stated pressure, temperature, chemical, and load limits, and do not treat a general explanation as a recipe for heating an unknown substance. Thermo Fisher’s cited manual cautions that its chamber is not designed for exposure to certain concentrated chemicals.
