Taste Shapes Support for Climate-Friendly School Meals

In six Swedish schools, students were more accepting of lower-carbon recipe reformulation than vegetarian-only days. Taste, satiety and familiarity mattered, but the findings are local—not a universal verdict.

Students in six Swedish schools were more accepting of lower-carbon recipe reformulation than of vegetarian-only days, and taste and feeling full were central to how they judged the meals. The finding points to a practical distinction for school meal planners: reducing a meal’s climate impact without changing its familiar form may be received differently from removing meat altogether. It is evidence from one municipality, not a universal measure of student opinion.

What the Swedish study found

A mixed-methods study by Hunsberger, Fatani and André, published in Appetite in 2026, examined student views of climate-friendly school meals in Lund Municipality, Sweden. Its survey included 1,268 students at six schools; discussions with 20 students at two schools added qualitative context. The survey fieldwork took place in fall 2021, several years before the article’s publication. The PubMed record and abstract describe the study and its findings.

Across the survey and discussions, students were more accepting of lower-carbon recipe reformulation than of vegetarian-only days. Students described taste and satiety—the sense that a meal is filling—as important, alongside familiarity and expectations about what counts as a normal meal. Meat was often treated as a usual part of one. These findings help explain why two approaches that both reduce reliance on meat may feel quite different to students.

The researchers also found that more positive attitudes were associated with students reporting that they considered climate when choosing food, selected vegetarian school meals more often, and were female. These are associations in the survey, not evidence that any of those characteristics causes acceptance.

Why recipe reformulation may feel different from a vegetarian-only day

Recipe reformulation can reduce the amount or climate impact of meat while retaining a recognizable dish. A vegetarian-only day makes the absence of meat more visible and can depart more sharply from students’ meal expectations. That contrast is a useful way to interpret the Swedish findings, but the study does not establish a universal ranking for every recipe, school or student group.

Approach What changes What the 2026 study found
Lower-carbon recipe reformulation A familiar recipe is adjusted to reduce its climate impact, rather than being replaced by a vegetarian-only menu. Students in the Lund sample showed greater acceptance than for vegetarian-only days. The study does not give a universal acceptance rate. Hunsberger, Fatani and André, 2026.
Vegetarian-only days Meals on designated days do not include meat. Acceptance was lower than for recipe reformulation in this sample; this does not show that students universally oppose vegetarian meals. Hunsberger, Fatani and André, 2026.

The study’s title, “As long as it tastes good,” captures the importance attributed to taste, but it is the article title—not a separately documented verbatim quote from a student. Chalmers University of Technology’s 2 October 2026 news item quotes co-author Erik André describing reformulation as a potentially useful complementary approach that can reduce climate impact while keeping food appreciated by students. What a separate school-meal intervention adds

A 2024 controlled intervention in six Swedish compulsory schools tested a low-carbon menu designed to reduce greenhouse-gas emissions by 20%. Researchers measured food consumption, plate waste and meal satisfaction. The study’s abstract reports that neither the menu change nor additional information significantly affected acceptance in that intervention. André and colleagues’ 2024 article concerns an intervention, not the same question or design as the 2026 student-perception study.

The results are related but should not be treated as a direct contradiction or head-to-head test. The 2026 study compared reported attitudes toward approaches to meat reduction in one municipality; the 2024 study evaluated a particular menu intervention and its measured outcomes in six schools. Its finding applies to that menu, setting, time period and measurement design. It does not show that information never helps, or that all low-carbon menus receive the same response.

How schools can interpret acceptance

Stated attitudes matter, but they are only one part of whether a school meal program works. The U.S. Department of Agriculture’s School Nutrition and Meal Cost Study illustrates the broader range of domains relevant to school meal programs, including operations, nutrition, cost and revenue, participation, dietary intake and plate waste. Its resource page is a measurement framework, not evidence about Swedish students’ acceptance of climate-friendly meals. See the USDA study page.

  • Ask about the eating experience: taste, satiety and familiarity were prominent in the Lund students’ accounts.
  • Distinguish kinds of menu change: reformulating a recognizable dish is not the same intervention as serving vegetarian-only meals.
  • Measure more than stated approval: satisfaction, food consumption and plate waste can add practical context to attitude surveys.
  • Keep local context visible: reactions observed in one municipality should not be presumed to represent another country, age group or school food culture.

International policy reports discuss sustainability measures and education in school meals, but they do not establish a universal level of student support. See the OECD’s 2023 report and the Global Child Nutrition Foundation’s 2024 survey report, published in 2025.

What the evidence does not establish

  • It does not estimate how students everywhere feel about climate-friendly meals; the central study covered six schools in one Swedish municipality.
  • It does not prove that taste alone determines acceptance or that students universally reject vegetarian meals.
  • It does not show that every reformulated recipe will be liked, or that information is ineffective in all settings.
  • Because the survey fieldwork occurred in fall 2021, its reported attitudes should not be treated as a real-time measurement of student opinion in 2026.
