Choose a dedicated slow cooker if you mainly want simple, long-cooked meals with little supervision. Choose a pressure multicooker if you’ll regularly use pressure cooking as well as other modes such as sautéing or steaming. The label “multicooker” alone does not guarantee pressure cooking—or any particular combination of functions—so compare the exact model’s features and slow-cooking performance before you buy.
What separates a slow cooker from a multicooker?
Dedicated slow cooker
A slow cooker is built for gentle cooking over several hours, often with minimal attention during the cooking period. Its straightforward purpose can suit routines built around stews, chili, and similar meals that are started well before dinner.

Multicooker
Multicooker is a broad category, not a promise of one standard feature set. Consumer Reports distinguishes pressure multicookers—which can also slow-cook and often offer sautéing or keep-warm—from non-pressure models that may add functions such as steaming or rice cooking. Check the manufacturer’s feature list for the specific model. Consumer Reports’ multicooker buying guide explains the distinction.
For example, Instant Pot’s category page lists pressure cooking, slow cooking, sauté/sear, and steaming among its programs; that describes its listed products, not every multicooker on the market. See Instant Pot’s multicooker features.

Which appliance fits your routine?
| Your cooking habit or priority | Better starting point | Why |
|---|---|---|
| You often start stew or chili before leaving home and want simple, unattended cooking. | Dedicated slow cooker | Its central purpose is long, gentle cooking; USDA FSIS says low can be used for the full cooking period when the appliance is operating. |
| You expect to pressure-cook regularly and also want functions such as sautéing, steaming, or rice cooking. | Pressure multicooker | One appliance may combine those jobs, but the modes differ by model. |
| You are replacing a slow cooker and rarely expect to use pressure cooking. | Dedicated slow cooker | Additional functions are useful only if they fit your actual routine. |
| You have limited storage and want one appliance to handle several tasks. | Multicooker may fit | It can consolidate functions, but check the appliance’s dimensions, storage needs, and actual modes. |
| You rely on familiar slow-cooker recipes and timings. | Compare specific models or keep a dedicated cooker | Slow-cooking performance and timing vary among multicookers. |
Will a multicooker slow-cook as well as a dedicated cooker?
Do not assume that a slow-cook button makes two appliances interchangeable. Consumer Reports tests slow-cooking separately from other functions and says the time its tested models needed for stew varied. Its lead multicooker tester, Ginny Lui, said: “Some models can slow cook stew in 5 hours while others need up to 10 hours. It requires some trial and error to figure out how much time each one needs.” Those are timings from particular tested models, not a universal range or a guarantee for every product. If recipe timing matters, check model-specific guidance and be prepared to adjust.
When comparing, look at the controls as well as the feature list: how easily you can select settings, whether the appliance has the modes you will use, and how its inner pot and accessories fit your cleaning routine. The Consumer Reports buying guide describes testing several functions separately, including pressure cooking, rice, steaming, slow-cooked chili and beef stew, sautéing, and ease of use.

Safe slow cooking and pressure use
Slow-cooker food safety
- USDA FSIS slow-cooker guidance, last updated March 6, 2025, says most slow cookers have two or more settings and generally operate between 170°F and 280°F. If possible, it suggests starting on high for the first hour and then switching to the recipe setting; low can be used for the full cooking period when the appliance is operating.
- Thaw meat and poultry before putting them in a slow cooker. Frozen food takes longer to reach a safe internal temperature and can cool the other food in the cooker, according to USDA FSIS guidance on frozen food, last updated July 3, 2024.
- Use keep-warm only after the food is completely cooked to a safe internal temperature; it is for holding food, not cooking it.
Pressure-multicooker use
Follow the exact model’s manual for fill limits, pressure operation, and steam release. Steam can burn, and pressure-release methods are model-specific; do not improvise directions.

A practical buying checklist
- Confirm whether the multicooker actually has pressure cooking if that is important to you.
- List the extra modes you will use often—not merely those that appear on the control panel.
- Compare slow-cooking controls and model-specific recipe timing if you expect to use it for all-day meals.
- Check capacity, dimensions, storage footprint, inner-pot design, and cleaning needs against your kitchen and household.
- Choose a dedicated slow cooker if simplicity and familiar long-cook routines matter more than extra modes; choose a pressure multicooker if you will make regular use of its versatility.
