The best choice depends on your priorities, not a universal profit rule.
What selling your legendary fish gets you
Selling turns the fish into immediate in-game gold. The Stardew Valley Wiki lists these standard-quality sale values for the five original legendary fish; the retrieved reference does not state a publication year for the figures.

These are in-game sale values, not real-world prices. Quality and profession affect the amount: for example, the Wiki lists the Legend at 10,000g at iridium quality and 15,000g at iridium quality with the Angler profession. Keep it for collection or display
If you value having a rare catch in your collection or on display, keeping it is a valid choice. The original legendary fish are normally limited to one catch per save file, or once per player in multiplayer, so selling can mean giving up that particular fish for a long time. The limit is not absolute in every circumstance: the Wiki notes that Challenge Bait can produce up to three of one legendary fish at once, and panning with a Fisher enchantment can also enable multiple catches. Put it in a fish pond for roe
Since version 1.6.9, legendary fish can go in fish ponds. The official changelog says: “You can now put legendary fish in fish ponds. These are limited to one per pond and produce legendary fish roe. Each fish has a unique water color.” Official Stardew Valley 1.6.9 changelog
Pond output has changed across versions: the Wiki’s Legend history records a roe-chance reduction in 1.6.13 and an increase in production frequency in 1.6.15. A pond occupies one fish pond slot for one legendary fish. It trades an immediate sale for roe produced over time; the cited sources do not establish a universal long-term break-even point across fish and game versions. Treat ponding as an alternative that may suit your goals, not a guaranteed better investment.

Do you need a legendary fish for a quest?
The Legend’s Wiki page says it is not used in any quests. That is a fish-specific fact about the Legend; it should not be generalized to every rare item or quest in Stardew Valley. Stardew Valley Wiki: Legend

- Sell it if immediate gold is more useful than keeping this catch, especially when the fish’s quality and your profession make its sale value attractive.
- Keep it if collection, display, or personal attachment is worth more to you than the cash.
- Use a pond if you want to retain the fish and produce roe over time, and accept that results depend on game version and time.
