A 2021 household-storage study compared plastic with a PE-layered microperforated paper bag—not cloth—and found that freshness depends on a trade-off: limiting moisture loss can slow drying, while trapped humidity can encourage mold.
What the available comparison actually tested
Alpers and colleagues’ 2021 study examined German bakery breads stored in four conditions: a metal bread box, a PE-layered microperforated paper bag, a room-temperature low-density polyethylene (LDPE) plastic bag, and an LDPE bag in a refrigerator. It did not test a reusable cloth or linen bag, so it cannot establish a winner between cloth and plastic. Read the study.

The room-temperature setups were approximately 21–22 °C; refrigerated storage was approximately 8.2 °C. The researchers monitored temperature and humidity, but the bread samples came from one manufacturing batch per bread type. The findings are useful for understanding those tested cases and the moisture trade-off, not for predicting a universal shelf life.

A bag that lets bread lose moisture more readily may help avoid a humid environment, but moisture loss can make the crumb firm and dry. A more moisture-retentive enclosure can slow drying, yet higher humidity can favor microbial growth. Bread type and storage conditions also matter, so “fresh” may mean a softer crumb to one person and a less humid, better-ventilated environment to another.

The bread needs to be completely cooled and placed in the refrigerator to avoid condensation. This product provides a 90 days warranty service
In the study, the microperforated paper bag was more moisture-permeable and had lower measured relative humidity than the plastic bag. That does not make it equivalent to cloth: materials, construction, and airflow differ, and the experiment did not establish how a washable cotton or linen bag would perform.
What happened to mold in the tested storage conditions
Room-temperature plastic
For pan wheat bread in the study’s room-temperature plastic-bag condition, visible mold was first recorded on day four in one sample and day five in three samples. These are observations from that bread and setup, not an expiration timetable for bread at home.

Microperforated paper
In the microperforated paper condition, visible mycelium appeared from day five or six in the reported pan-wheat-bread samples. The result does not show that paper—or cloth—will always prevent mold longer than plastic.
Refrigerated plastic
No mold was detected during the ten-day test in the study’s refrigerated plastic-bag conditions, based on visual inspection and plate counting. That result applies to the breads, approximately 8.2 °C storage temperature, and test setup; it is not a guarantee for every loaf or refrigerator. Refrigeration can also change how bread’s texture is perceived, so mold observations alone do not settle which method gives a preferred eating quality.

How to choose a storage method at home
- If a softer crumb is your priority: a more enclosed bag may help limit moisture loss, but the study does not prove that cloth or plastic is best for every bread.
- If you prefer more ventilation: a breathable or perforated option may allow moisture to escape, with the trade-off that bread can dry or firm sooner.
- Judge the material, not just the label: microperforated paper is not cloth, and engineered barrier films are not the same as ordinary household plastic bags.
- Match the comparison to your bread: crust, crumb, recipe, and storage temperature can affect what “fresh” means and how quickly quality changes.
A separate 2018 study of engineered packaging for preservative-free white bread reported shelf-life extension of up to five to seven days using a high-barrier film with initial oxygen around five percent by volume. That was an industrial/experimental packaging result, not a test of household plastic versus reusable bread bags. Read the packaging study.
What to do if you see mold
USDA Food Safety and Inspection Service guidance says, “If food is covered with mold, discard it.” Its bread-specific guidance is to discard moldy bread rather than cut around a visible spot. Do not sniff moldy food; clean the refrigerator or pantry area where it was stored. Read USDA FSIS mold guidance.

What the evidence does—and does not—say
A small, short-duration study published in the University of Khartoum Engineering Journal compared open plastic, closed plastic, and paper bags over 24 hours, with nine semi-trained tasters evaluating samples every eight hours. Its abstract reports relatively better short-term quality in paper bags and better longer-term shelf life in plastic bags. That narrow comparison does not resolve the cloth-versus-plastic question or outweigh the limits of the specific household-storage study above. View the article record.
The practical answer is therefore conditional: plastic may retain moisture, while more permeable materials may let it escape; either effect can matter to quality. The cited controlled household study did not include reusable cloth, so a claim that cloth keeps bread fresher longer than plastic is not established by this evidence.
