Pasteurized milk is the safer choice. Raw milk can carry harmful germs, and clean farms or testing cannot guarantee that every batch is free of them. FDA and CDC say pasteurized milk provides the same nutritional benefits without raw milk’s added risks. Taste is a matter of preference; the sources reviewed do not establish that one type tastes better overall.
Safety: pasteurization reduces a real, avoidable risk
Raw milk is milk that has not been pasteurized. Pasteurization heats milk to kill harmful germs. Raw milk can carry Campylobacter, E. coli, Listeria, Salmonella, Cryptosporidium, and Brucella. FDA describes pasteurization as a public-health measure that largely eliminates the risk of illness from milk; it does not make every food-handling risk impossible.

Farm hygiene and testing can reduce contamination, but they cannot guarantee that every batch is free of harmful germs. CDC makes this point in its raw-milk safety guidance, updated January 31, 2025. FDA reports 143 outbreaks associated with contaminated raw milk and raw-milk products since 1987 on its Food Safety and Raw Milk page; that cumulative count is separate from estimates produced by a particular study period.

The study also estimated that 96% of illnesses attributed to contaminated dairy products were linked to unpasteurized milk and cheese, which 3.2% of the population consumed. These are population-level estimates based on outbreak data, not a per-serving probability for an individual. See Costard et al., 2017.

Who should be especially cautious
CDC identifies children under five, adults over 65, pregnant people, and people with weakened immune systems as more likely to become seriously ill from raw-milk pathogens. Illness can cause diarrhea, stomach cramps, and vomiting; severe complications can include hemolytic uremic syndrome, Guillain-Barré syndrome, kidney failure, paralysis, stroke, or death. These are possible outcomes, not inevitable consequences of drinking raw milk.
Nutrition: no established advantage for raw milk
FDA says research shows no meaningful difference in the nutrient content of pasteurized and unpasteurized milk. CDC says pasteurized milk offers the same nutritional benefits without raw milk’s risks. This does not mean every nutrient is perfectly unchanged under every processing method; it means the evidence cited by these agencies does not establish a meaningful nutritional advantage for raw milk. FDA explains its position in its Raw Milk Questions & Answers and review of raw-milk claims.

Lactose, allergies, and health claims
Pasteurization does not remove lactose: FDA says raw and pasteurized milk contain lactose at the same concentration, and pasteurization does not cause lactose intolerance. Milk proteins that can trigger an allergy are present in both. Raw milk is not an established treatment for milk allergy, lactose intolerance, or other illnesses; FDA says scientific evidence does not support those claims.
Taste: preference is not proof of quality or safety
Some consumers say taste is a reason they choose raw milk, but the FDA and CDC material cited here does not establish a universal taste winner through a controlled head-to-head sensory comparison. Flavor preference is subjective, and differences between products may matter. Liking a milk’s flavor does not show that it is safer or more nutritious.

Safety cannot be judged by the senses. FDA states that consumers cannot tell whether raw milk is safe by looking at it, smelling it, or tasting it. That warning does not mean raw and pasteurized milk taste identical; it means sensory checks cannot identify harmful germs. See the FDA consumer factsheet.
How to choose, store, and respond to exposure
- Check the label: Choose milk clearly labeled “pasteurized.” If the processing status is unclear, ask the retailer.
- Keep it cold: Refrigerate milk at 40°F (4°C) or below, and follow the product’s date and handling instructions. FDA gives this temperature in its pregnancy food-safety guidance; CDC gives the same threshold for perishable foods.
- Do not rely on smell or appearance: They cannot establish that raw milk is free of pathogens.
- Seek medical advice if needed: FDA advises seeking medical care if someone becomes ill after drinking raw milk. Pregnant people concerned about an exposure should contact a healthcare professional.
U.S. raw-milk sales rules
FDA says a 1987 regulation prohibits interstate sales of raw milk, while rules for sales within a state are set by that state. FDA’s currently surfaced page reports that 20 states explicitly prohibit intrastate raw-milk sales in some form and 30 allow them. This is a dated snapshot, not a substitute for current local law; check the relevant state agency for rules where you live. See FDA’s raw-milk page.
