To change the label, select the adjustment-layer item and use its Label/color control. To change the image, apply a color effect to the layer. These are separate operations: a label helps organize your project; it does not alter the video.
Change an adjustment layer’s label color

In the Project panel or timeline, select the adjustment-layer item.

Open its Label or color assignment control and choose a label color. In some versions, the historical command is Edit > Label; the exact menu wording and placement can vary by Premiere version and operating system. Adobe’s current label-preferences guidance describes label colors and defaults, but does not confirm that exact per-item menu path for current releases. See Adobe’s label preferences guidance.

To change available label colors or defaults, open Labels in Premiere’s preferences: on macOS, Premiere > Settings > Labels; on Windows, Edit > Preferences > Labels. Adobe documents label color presets and defaults in these settings.

Check that the item is distinguishable in the Project panel or timeline. The label is an organizational marker only; changing it does not recolor the footage.
Change the color of footage with an adjustment layer
An adjustment layer is transparent and sits above video clips in the timeline. Effects applied to it affect clips on underlying tracks within the layer’s duration, making it useful for applying a consistent look across multiple clips. Create an adjustment layer using File > New > Adjustment Layer.

Place it on a video track above the clips you want to affect, and extend it across the relevant timeline range.

Select the adjustment layer and apply a color effect or Lumetri adjustment.

Adjust the effect’s parameters in Effect Controls. The effect changes the rendered image on the clips below; it does not change the layer’s interface label. For Adobe’s workflow for applying effects across clips, see How to adjust and apply color effects across clips.

To change both: set the label for project organization, then apply a separate effect for the footage.
The explicit Edit > Label path is documented in Adobe’s archived CS6 reference, so treat it as historical rather than guaranteed current wording. Consult the archived CS6 reference if you need to identify that legacy command; in a current installation, use the label control exposed by your version.
