Pour quatre personnes, cette recette attribuée au restaurateur David Lanher fait rôtir un poulet fermier sur des pommes de terre et des légumes de saison, avec des citrons blanchis puis légèrement colorés. Le Monde indique de tourner et d’arroser régulièrement la volaille, mais ne précise pas sa durée totale de cuisson : fiez-vous à la cuisson réelle du poulet plutôt qu’à un temps inventé.
Ingrédients pour 4 personnes
- 1 poulet fermier
- 2 citrons bio
- 1 kg de pommes de terre
- Au choix, selon la saison : 4 carottes, 3 poireaux ou 2 courgettes
- 300 g d’épinards frais en branches, facultatifs
- Huile d’olive, sel et poivre
- Épices et aromates au choix, par exemple paprika, thym, romarin, laurier ou sauge
Préparer les citrons et les légumes
- Coupez les citrons en six ou huit quartiers ou tranches. Plongez-les dans l’eau bouillante une à deux minutes, égouttez-les, changez l’eau et recommencez jusqu’à les avoir blanchis trois fois. Cette étape vise à réduire leur amertume.
- Déposez les citrons dans un grand plat en fonte avec un filet d’huile d’olive, du sel et du poivre. Enfournez 20 minutes à 180 °C pour les faire légèrement colorer.
- Salez, poivrez et huilez légèrement le poulet. Coupez les pommes de terre en grosses frites ou en gros cubes. Taillez les légumes choisis en morceaux assez gros.
Faire rôtir le poulet
- Répartissez les pommes de terre sur les citrons et ajoutez les carottes à ce stade si vous les utilisez. Posez le poulet par-dessus. Les poireaux ou les courgettes, plus tendres, s’ajoutent au milieu de la cuisson.
- Commencez la cuisson du poulet sur un côté. Toutes les 15 minutes, tournez-le d’un quart de tour, arrosez-le avec son jus et mélangez les légumes.
- Poursuivez jusqu’à ce que le poulet soit cuit. La recette publiée ne donne ni poids de volaille, ni durée totale de rôtissage, ni température interne cible; les 20 minutes à 180 °C concernent uniquement la coloration initiale des citrons.
- Sortez le poulet du plat et laissez-le reposer 10 à 15 minutes. Si vous le souhaitez, mélangez les épinards au jus et aux légumes pendant ce repos, puis remettez le plat au four cinq minutes, jusqu’à ce que les feuilles fondent.
- Découpez le poulet et servez-le avec les légumes et le jus du plat.
