Why bypassing iOS security matters
iOS uses multiple protections to limit what apps and processes can do. Apple’s runtime security documentation describes controls including app sandboxing, declared entitlements, code-signing-related restrictions, and protections for system files. These controls help contain apps and protect the operating system and personal information.

Apple warns that removing security layers can expose an iPhone and its data to security weaknesses. The practical consequences are not guaranteed on every modified device, but Apple lists possible instability, unexpected crashes, app freezes, data loss, shortened battery life, unreliable calls or mobile data, inaccurate or delayed location information, and disruption to some Apple and third-party services. How jailbreaking differs from alternative app distribution in the EU
Installing an app through an alternative marketplace or an authorized developer website in the European Union is not, by itself, jailbreaking. Apple describes these as alternative app distribution options available to EU users under Digital Markets Act requirements. The distinction is whether iOS itself has been modified:

What Apple says about updates and service
Apple says some unauthorized modifications may prevent future software updates from applying correctly and could leave a device permanently inoperable. It also says unauthorized modification violates the iOS and iPadOS Software License Agreement, and Apple may deny service for an iPhone with unauthorized software installed. The wording matters: Apple describes possible outcomes, not inevitable ones for every device.
