To turn on Driving Focus from Control Center, touch and hold Focus, then tap Driving. This quick toggle works after Driving Focus has been set up. To turn it off, open the same menu and tap Driving again. [Apple Support]
Turn Driving Focus on or off in Control Center

Open Control Center. On an iPhone with Face ID, swipe down from the top-right corner. On an iPhone with a Home button, swipe up from the bottom edge.

When Driving Focus is active, its icon appears in the status bar and on the Lock Screen. It silences or limits notifications according to your Focus settings. [Apple Support]

If Driving is missing from the Focus menu
Add and configure it first. Apple documents Driving Focus for iOS 15 and later. [Apple Support]

Open Settings > Focus.

Tap the Add button and choose Driving.

Tap Customise Focus and follow the setup prompts.
Once setup is complete, return to Control Center and use the Focus menu to activate it.

Choose when Driving Focus activates automatically
If you prefer not to toggle it manually, go to Settings > Focus > Driving > While Driving. Apple lists these activation options; the wording and availability can vary with iOS version and region. [Apple Support] [iPhone User Guide]

What Driving Focus does to notifications
Driving Focus silences or limits texts and other notifications based on your configuration. Siri can read replies if you have configured that feature. Apple says incoming calls are allowed only when the iPhone is connected to CarPlay, a car’s Bluetooth system, or a hands-free accessory. These behaviors are separate from the steps for toggling Driving Focus. [Apple Support]
You can also configure allowed or silenced people and auto-replies in Driving Focus settings. In supported apps, Focus Status can indicate that notifications are silenced if you grant permission; Apple says the name of the Focus itself is not shared. [Apple Support]

Use Driving Focus without treating it as a safety substitute
Driving Focus can help limit notifications, but Apple warns that it is not a substitute for following laws and rules that prohibit distracted driving. [iPhone User Guide]
