Google’s separate AI in Search Labs toggle opts you out of experiments; it does not disable every AI Overview.
Use the Web filter to see text-based search results

Search for your query in Google.

On the results page, select Web in the result-type filters. Google says this filter displays text-based links without features such as AI Overviews. The filter applies to the results page; Google does not describe it as a permanent, account-wide preference.

Google Search Help says core AI Overview features cannot be turned off, and identifies the Web filter as the alternative. The placement of search controls can vary while Google updates Search settings, so you may not see the same layout as another user. Google Search Help: AI Overviews in Search.
Turn off the AI in Search Labs experiment
If you joined the Labs experiment, you can opt out of that test. This does not turn off all AI Overviews in Google Search.

Sign in to your Google Account and make sure Incognito is off.

Open a new tab and select Labs.

Select Manage, then switch off AI in Search.

Switch off AI in Search.
Google describes this control as an opt-out from Labs experiments, not a setting for disabling the core AI Overview feature. The available settings and their placement may differ as Google updates Search settings. Google Search Help: AI Overviews in Search.

When an AI answer appears, verify consequential claims
Google says AI Overviews appear when its systems determine generative AI may be especially helpful, and warns that AI responses can make mistakes. For important decisions, check the supporting links and compare the answer with other Search results. Google Search Help: AI Overviews in Search.
