Put the cut vegetables in a clean, covered container and refrigerate promptly at 40°F (4°C) or below. This routine helps limit contamination and manage moisture, but there is no single evidence-based fridge-life number that applies to every home-chopped vegetable.
How do I store washed and chopped vegetables for meal prep?
- Clean up first. Wash your hands and clean the knife, work surface, and cutting board. Use a separate board for produce and raw meat, poultry, or seafood.
- Rinse vegetables before cutting. Wash whole vegetables under running water. Scrub firm produce, such as cucumbers, with a clean produce brush. Do not use soap, detergent, or commercial produce wash.
- Dry thoroughly. Pat vegetables dry with a clean cloth or paper towel. A salad spinner is an optional convenience for leafy greens; towel drying is the method in the cited FDA guidance.
- Chop and portion. Use clean utensils and place the pieces in a clean, covered container. Airtight containers are a practical choice, but the guidance does not establish that a particular container material or lid design extends storage life.
- Refrigerate promptly. Store cut vegetables at 40°F (4°C) or below. Keep them away from raw meat, poultry, seafood, and any juices from those foods.
FDA says, “Washing can reduce bacteria that may be present but will not eliminate it.” Washing and careful storage reduce risks; they do not make produce sterile.

Should I wash vegetables before meal prep?
Yes. Rinse uncut vegetables under running water before peeling or chopping. Washing before cutting helps avoid carrying dirt or contaminants from the exterior onto the cut surfaces. FDA and USDA guidance do not recommend washing produce with soap or household detergent. If a package labels produce as pre-washed or ready to eat, do not rewash it; follow the package directions.
After rinsing, dry the vegetables with a clean towel or paper towel. Drying removes surface moisture, and FDA says it can further reduce bacteria present on the surface. Use clean hands and equipment when you cut them.

How long do chopped vegetables last in the fridge?
There is no comprehensive official storage-time table in the cited guidance for every vegetable once it has been washed and chopped at home. Vegetables vary in texture and moisture, so a single number would imply more certainty than the available guidance supports. Follow any package or product-specific directions, keep cut vegetables refrigerated, and use a conservative judgment about quality.
Discard vegetables that look rotten or spoiled. However, normal appearance or smell cannot prove that food is free of harmful bacteria, so do not use either as a safety guarantee.

Does every vegetable belong in the refrigerator?
For this meal-prep routine, refrigerate vegetables once they are cut. USDA’s general fresh-produce chart lists whole potatoes, sweet potatoes, and dry onions for dry storage at 60–70°F; that guidance is for whole produce, not cut pieces. Once cut, refrigerate them promptly like other cut produce.
For refrigerated produce, USDA notes that vegetables need higher humidity and that sealed crisper drawers provide a suitable environment. A covered, clean container helps keep chopped vegetables contained; the official guidance does not identify a particular container material or design as superior.

- Clean hands, utensils, and food-contact surfaces before handling chopped vegetables.
- Refrigerate fresh-cut items promptly rather than leaving them at room temperature while you finish other prep.
