These steps help preserve quality; they do not make food last indefinitely or make a damaged product safe. USDA Food Safety and Inspection Service (FSIS) defines shelf-stable foods as foods that can be safely stored at room temperature, or “on the shelf.”
Choose the right storage place
Use a pantry or cupboard that stays cool and dry, away from heat extremes, dampness, and household chemicals. Heat can speed quality loss, while moisture can damage packaging and encourage mold. Keep food away from cleaning products and other poisons.

- Avoid storage above or beside a stove or oven.
- Do not store staples under a sink, where leaks can go unnoticed.
- A damp basement or garage is a poor choice for dry goods and canned food.
For canned goods, USDA FSIS says temperatures below 85°F are best and temperatures above 100°F are harmful. Avoid places where temperatures swing sharply.
Protect dry staples from pests and moisture
Inspect bags and boxes of rice, pasta, flour, sugar, spices, and other dry goods for holes or tears that could admit insects or moisture. Keep food in its original package when it is intact and practical. If a package is open or vulnerable, transferring the contents to a clean plastic or glass container can add protection, as USDA FSIS advises. A container is a protective layer, not a guarantee of indefinite storage.

Choose a container that is clean, dry, suitable for food, and easy to close and clean. Keep the package label or product information available so you can follow any storage directions and identify the contents.
Use storage timelines as guidance, not guarantees
Storage charts give examples rather than a universal expiration rule. USDA FSIS lists the following periods in its shelf-stable food guidance; they are not a reason to use food that has been stored poorly, is past its label instructions, or appears compromised.

Store commercial canned foods in a cool, dry place and rotate supplies so older cans are used first. Discard cans that are swollen, leaking, punctured, extensively rusted, or deeply dented. Do not taste food from a suspicious can: botulinum toxin cannot be reliably detected by tasting.

Some packaged foods sold in cans or similar containers are labeled “Keep Refrigerated” and are not shelf-stable. Check the label instead of assuming that every can belongs in the pantry.
Follow refrigeration and freezing directions
When a package says to refrigerate or freeze, follow that direction rather than treating the food as a pantry staple. The U.S. Food and Drug Administration recommends keeping refrigerators at or below 40°F (4°C) and freezers at 0°F (-18°C). An appliance thermometer can help confirm the actual temperature.

Remember that flour is not safe to eat raw
Dry storage protects flour from dampness and pests, but it does not remove the risks of eating it uncooked. The FDA states, “Flour is a raw food.” Milling does not kill harmful bacteria that grains may carry. Do not taste raw flour, dough, or batter, and cook foods containing flour fully according to their directions. Home heat-treatment is not a reliable substitute for cooking.
When in doubt, prioritize the label and the food’s condition
Best-quality guidance and food safety are different questions. Shelf-stable foods can lose freshness, flavor, texture, or nutritional quality over time. Use package instructions, inspect packaging before use, and discard food when the package or contents seem questionable. No storage container or timeline can override a warning label or make compromised food safe.
