To make Windows hide the previous user’s name and sign-in tile, enable Interactive logon: Don’t display last signed-in in Local Security Policy. At the next sign-in, users will need to type their account name and password instead of choosing the last user’s tile. Microsoft says a restart is not required.

What changes for people signing in?
With the policy enabled, Windows asks users to identify their account by typing a qualified domain account name or a local user name, along with the password. This can reduce the information exposed to someone who can access the device’s sign-in screen, including through Remote Desktop, but it does not prevent sign-in attempts or replace a strong password.

Interactive logon: Don’t display last signed-in hides the previous user’s name and tile. Microsoft documents separate policies for blocking account details from appearing on the sign-in screen and for not displaying the username at sign-in. Those controls affect different information or parts of the sign-in flow, so they are not interchangeable. [Microsoft Learn] [Microsoft Learn]
In current Microsoft policy documentation, the setting is named Interactive logon: Don’t display last signed-in. It was called Interactive logon: Do not display last user name before Windows 10 version 1703. [Microsoft Learn]
