Clear every option and keep the select

If users should still see a prompt after the list is cleared, append a new placeholder option. For a single-selection dropdown, the placeholder label option is the first direct child option and has an empty string value.

Clearing options is different from clearing only the selected value: when a select has no options, it has no selected option.
What happens to child handlers and data?
When .empty() removes child elements, jQuery cleans up data and event handlers attached to those children. If your intention is to preserve data and handlers on a removed select for later reattachment, .detach() is the relevant alternative to .remove(); it does not replace .empty() when the goal is to clear the select’s contents.

Compatibility note
A jQuery issue opened in 2012 about $('#select').empty() setting the options length to zero was closed as fixed in 2013, with milestone 1.9. It concerned an old Internet Explorer refresh issue and is historical context, not evidence of a current defect. jQuery issue #1279
