To reheat enchiladas without drying them out, add a little sauce or water if they look dry, cover the dish, and heat gently until the center reaches 165°F (74°C). Use a covered oven-safe dish for several enchiladas or a vented microwave-safe dish for a single serving. Check the temperature rather than relying on a fixed time: portion size and appliances vary.
Reheat enchiladas in the oven
The oven is convenient for a batch and lets you warm the enchiladas together. USDA FSIS advises setting the oven to at least 325°F when reheating takeout leftovers; this is general leftover guidance, not an enchilada-specific time or temperature formula. - Heat the oven to at least 325°F. Transfer the enchiladas to a snug oven-safe dish if they are not already in one.
- If the sauce has thickened or the edges look dry, spoon a little enchilada sauce or water over the top. There is no established enchilada-specific quantity; use just enough to moisten the surface.
- Cover the dish with an oven-safe lid or foil. Covering helps retain moisture while the food heats through, as USDA FSIS recommends for leftovers.
- Warm until hot in the center. Check with a clean food thermometer and continue heating until the enchiladas reach 165°F (74°C) throughout.
- For a less-soft topping, uncover briefly at the end if you like. This is optional; keeping the dish covered for most of the reheating helps limit moisture loss.
There is no dependable fixed oven time for enchiladas in the cited guidance. The number and thickness of the enchiladas, their starting temperature, the dish, and the oven all affect how long they take.

Reheat one serving in the microwave
The microwave is faster for an individual portion, but it can heat unevenly. Use a microwave-safe glass or ceramic dish rather than assuming takeout packaging is safe to microwave. USDA FSIS advises covering food with a microwave-safe lid or wrap, venting the cover, rotating or turning the food, allowing standing time, and checking several spots. USDA FSIS recommends reaching 165°F and checking leftovers in multiple places because microwave heating can leave cold spots. USDA FSIS: How do I reheat leftovers safely?
Reheat frozen enchiladas safely
USDA FSIS says frozen leftovers can be reheated without thawing in an oven or microwave, though they take longer. Use a covered, oven-safe dish or a covered microwave-safe dish, and check multiple places with a food thermometer until the food reaches 165°F (74°C). The agency does not give a specific frozen-enchilada reheating time. USDA FSIS: Leftovers and Food Safety

Choose the method that suits the serving
| Method | Works well for | Moisture and texture steps | Safety check |
|---|---|---|---|
| Oven | Several enchiladas or a batch | Add a little sauce or water if needed; cover the dish while reheating. | Use an oven set to at least 325°F and heat to 165°F in the center. |
| Microwave | One serving or a quick reheat | Use a microwave-safe glass or ceramic dish, add liquid if needed, cover with a vent, and rotate partway through. | Allow standing time, then check more than one spot and heat to 165°F throughout. |
The USDA guidance supports these handling steps; it does not establish that one method produces a definitively better enchilada texture. Whichever method you choose, stop heating once the food is safely hot rather than continuing unnecessarily.
Store leftovers safely before reheating
Reheating will not make food safe if it was stored improperly. USDA FSIS advises refrigerating perishable food within two hours, or within one hour when the temperature is above 90°F, and using most cooked leftovers within three to four days. These are general leftover guidelines, not enchilada-specific storage tests. USDA FSIS: Keep Food Safe! Food Safety Basics
