For chocolate-covered treats that set neatly, use dry centers, melt chocolate gently, dip and drain each piece, then let it firm on parchment. Temper real chocolate when you want a glossy, firm shell; for an easier casual batch, melted chocolate or confectionery melts can work, but the finish may differ. Strawberries need extra care because their moisture and freshness affect both coating and storage.
Choose the coating and centers
Your choice depends on the finish you want and what you plan to dip. The coating methods are not interchangeable: tempering helps real chocolate set with a glossy, firm finish, while a quick melt is simpler but less controlled.

| Option | Best suited to | What to expect |
|---|---|---|
| Real chocolate, tempered | Centers such as cookies, or other treats where a glossy, firm shell matters | Temperature control is important. A thermometer is useful, and tempered pieces can set at cool room temperature. King Arthur Baking’s tempering guide explains the process. |
| Real chocolate, melted without tempering | A simple homemade batch where ease matters more than a controlled finish | Expect a less predictable set and appearance than with properly tempered chocolate. |
| Confectionery melts | A convenient coating for casual dipping | These typically substitute other fats for cocoa butter, so they are not the same as real chocolate. |
Dry centers such as cookies, pretzels, and dried fruit are generally easier to dip than fresh fruit. Whatever you choose, make sure the centers are structurally sound. If using strawberries or other fresh fruit, wash them and dry them completely; surface water can interfere with the coating.

- Line a baking sheet or tray with parchment so the dipped pieces can firm without sticking.
- Have any toppings ready before you begin. Sprinkles, chopped nuts, or similar decorations are easiest to add while the coating is still wet.
- Use an ordinary bowl and utensils for a simple melt. If you plan to temper real chocolate, have a suitable candy or instant-read thermometer ready to monitor temperature.
- Keep water away from the chocolate while melting and dipping.
Melt and dip the treats
- Prepare the centers. Wash and thoroughly dry fresh fruit. Keep dry treats free of crumbs or loose pieces that could fall into the coating.
- Melt the coating gently. Stir and follow the directions for your chosen recipe or product. If tempering real chocolate, use a thermometer and follow a tempering method rather than treating an ordinary melt as tempered.
- Dip one piece at a time. Lower or roll the center in the chocolate, then lift it out and let the excess drip back into the bowl.
- Set it on parchment. Place each piece on the lined tray with a little space around it. Add toppings while the coating is still wet.
- Let the coating firm. Allow the pieces to set before decorating further, packing, or serving. King Arthur Baking notes that tempered chocolate can be used to coat centers or dip cookies, then set out at cool room temperature; a quick untempered melt should not be assumed to set the same way. See its tempering instructions.
Make chocolate-covered strawberries
Strawberries are a useful example of the general method, with one important extra step: dry them completely after washing. Any water on the berries can interfere with coating, and fresh fruit needs more careful timing and refrigeration than dry treats.

- Wash the berries, then dry them thoroughly. Leave the leafy tops on if you want a convenient place to hold them while dipping.
- Prepare a parchment-lined tray and have decorations ready.
- Melt your chosen coating gently. Follow a strawberry recipe for its specific coating and directions, such as King Arthur Baking’s chocolate-dipped strawberries recipe or Hersheyland’s recipe.
- Dip each berry, let excess chocolate drip off, and set it on the parchment. Add toppings before the coating firms.
- Let the coating set, then serve or store the berries with their freshness in mind.
For a visual walkthrough, Hersheyland’s guide to making chocolate-covered strawberries also covers the basic process.
Store fresh fruit safely
Chocolate-covered strawberries are perishable because their centers are fresh fruit. Refrigerate leftovers promptly and use them while fresh; a recipe’s suggested storage approach is not a universal shelf-life guarantee. Hersheyland’s strawberry recipe offers its own guidance for short room-temperature storage and describes freezing berries on a lined tray before transferring them to a bag. Treat that as recipe-specific advice, not a general guarantee for every batch.

For food safety, FoodSafety.gov advises that perishable foods should not sit at room temperature for more than two hours, or more than one hour when the temperature is above 90°F. Its guidance is in Maintain Food Safety While Cutting Food Waste. This is a safety limit, separate from the quality question of how a chocolate shell sets or whether condensation forms.

Dry centers are easier to handle, but storage still depends on the filling and recipe. Do not assume that guidance for fresh strawberries or one particular recipe establishes a safe shelf life for every chocolate-covered treat.
