Storage depends on what is inside the chocolate. Treats filled with fresh fruit, such as chocolate-covered strawberries, are perishable and need short-term handling; a chocolate coating does not make them shelf-stable. Solid chocolate candy without a perishable filling can generally be kept cool, dry, dark, and away from strong odors and temperature swings.
First, identify the filling
Use the filling—not the chocolate shell—to decide how to store a treat. Fresh strawberries and other fresh-fruit centers should be treated as perishable produce. For packaged candy with a shelf-stable filling, follow the package directions; general chocolate-storage guidance applies only when the product does not require refrigeration.

The USDA FSIS mail-order chart lists chocolate candy and other confections as suitable for cold or room-temperature storage and includes a broad one-year category entry. That is a general reference for confections, not a shelf-life guarantee for homemade dipped fruit, fresh fillings, or every packaged product. USDA FSIS mail-order food-safety guidance

Refrigerate for longer holding
Make or buy dipped strawberries close to serving time. If keeping them beyond a brief serving period, refrigerate them in a clean container, avoid stacking or crushing, and follow the recipe or seller’s directions. The recommendations differ: Hersheyland’s recipe suggests a sizable paper-towel-lined container that is loosely covered, while Betty Crocker’s recipe calls for a tightly covered container lined with waxed or parchment paper. Neither covering method is a universal rule.

Published recipe guidance also varies on duration. Hersheyland recommends using refrigerated berries within 24 hours for best results. Food Network Kitchen says they are best the first day, can sit on the counter for about a day under a loose plastic-wrap drape, and should be refrigerated if kept longer. Betty Crocker says its berries can stay fresh for up to three days refrigerated, depending on how ripe they were when coated. These are recipe-specific recommendations, not a validated universal shelf-life guarantee.
Keep room-temperature time short
A brief serving period at room temperature is different from leaving perishable fruit out for hours. FDA guidance says foods that require refrigeration should not sit at room temperature for more than two hours, or more than one hour when the air temperature is above 90°F. FDA: Are You Storing Food Safely? Keep the serving window short, and refrigerate the berries promptly if they are not being eaten.

Freeze only if texture is not the priority
Freezing advice is not consistent because thawed strawberries can lose their texture. Hersheyland recommends freezing berries separately until solid, then transferring them to a freezer bag and thawing before eating. Food Network Kitchen advises against freezing because thawed berries may become mushy. Treat freezing as a texture trade-off rather than the default storage method.
Discard spoiled fruit; do not confuse it with bloom
Discard strawberries that appear spoiled. Food Network Kitchen specifically advises tossing berries with fallen chocolate or mushy tops. Chocolate bloom is a separate appearance issue and cannot show whether a fruit filling is safe.

How to store solid chocolate and shelf-stable candy
Keep solid chocolate in a cool, dry, dark place, protected from strong odors and abrupt temperature changes. Manufacturer recommendations differ: Lindt’s FAQ recommends tightly wrapped chocolate at 14–20°C and 40–65% relative humidity, away from strong odors. The Hershey Company’s FAQ recommends well-wrapped solid chocolate at 55–60°F in a cool, dry place. These are brand recommendations, not interchangeable requirements; follow the product label, especially for candy with a filling that may require refrigeration.
If refrigeration is necessary for solid chocolate, Lindt advises protecting it in an airtight container or double wrapping it, then letting it warm gradually toward room temperature before unpacking. This reduces the chance that condensation forms on the chocolate.

Why stored chocolate can turn pale or spotty
Chocolate bloom changes appearance but is distinct from food spoilage. Hershey explains that heat can bring cocoa butter to the surface, creating cocoa-butter bloom. Moisture from condensation can dissolve surface sugar and lead to sugar bloom; Lindt also notes condensation risk when cold chocolate moves into warmer surroundings. Bloom may affect flavor or texture, but Hershey says bloomed chocolate is safe to use. That assurance applies to the chocolate itself, not to a perishable fruit filling.
