In GTA V story mode, the general approach is to get out of police sight and remain hidden while the search cools down, but that is not a guaranteed escape. The right method depends on which GTA game and mode you are playing.
How to lose the cops in GTA Online
Rockstar’s GTA Online starter tips describe two different options: evade pursuers through Los Santos tunnels, or call Lester to clear the wanted level for a fee.

If you choose the tunnel route, focus on breaking the pursuit rather than assuming that entering a tunnel automatically clears your wanted level. If you would rather use Lester, check the phone option in your current session; the cited guidance does not specify a price or establish that the option is available in every situation.
How to lose a wanted level in GTA V story mode
The Xbox-hosted Grand Theft Auto V game manual describes a wanted display of one to five stars, with the stars reflecting police interest. At five stars, the manual says the National Guard is called in. It does not provide a route, escape timer, or guaranteed method.

For a general approach, break the police line of sight and stay out of view while the search continues. The hiding guidance is described in the community-maintained GTA Wiki’s GTA V wanted-level reference, rather than in the manual. Do not rely on a particular hiding place or assume that remaining unseen will clear the wanted state in every mission or circumstance.

“GTA” covers games with different wanted systems. Rockstar’s tunnel and Lester tips apply specifically to GTA Online; the five-star description is from the GTA V manual. Secondary references describe different mechanics in GTA IV and San Andreas, so the GTA Online or GTA V instructions should not be treated as universal.
