How to keep the surface green
- Smooth the top. Use a clean spoon to level the exposed pesto after serving.
- Block contact with air. Drizzle on a thin layer of olive oil, or press food wrap directly against the pesto so there is little air trapped beneath it.
- Close and refrigerate. Replace the lid and return the jar to the refrigerator promptly. Repeat the surface-covering step after every use.
Pesto can brown as oxygen exposure contributes to oxidation, chlorophyll breakdown, and other browning processes. A 2024 study of fresh pesto discusses these changes and the importance of oxygen-exposed surface area: the study of pesto oxidation and browning. It examined an olive phenolic extract, not a direct home comparison of an ordinary oil layer with plastic wrap, so neither method has a proven color-preservation time advantage.

How long opened pesto keeps safely
For home-prepared pesto, Oregon State University Extension Service advises refrigeration and use within four days, or freezing for longer storage. This is a food-storage recommendation, not a color guarantee. A surface oil layer reduces air contact but does not lengthen that four-day window. Follow the package directions for commercially prepared pesto, since products and label instructions can differ.

For longer storage, spoon pesto into an ice cube tray, freeze it, then transfer the frozen portions to an airtight freezer container. Oregon State University Extension’s guidance describes this method but does not give a specific freezer-life limit: Herbs and vegetables in oil.

Food-safety cautions
Herbs or vegetables stored in oil can create oxygen-free conditions that allow Clostridium botulinum to grow. Oregon State University Extension’s pesto guidance is to refrigerate and use within four days or freeze; it also says safe canning times for pesto have not been researched. Do not store homemade pesto at room temperature on the assumption that oil, lemon juice, or ordinary home canning makes it safe.
Brown color alone does not establish whether pesto is safe or spoiled. The cited sources do not provide a visual test that can determine safety, so use the appropriate storage instructions rather than relying on color.

What blanching can—and cannot—do
Blanching basil or other greens before making pesto can destroy enzymes involved in browning. Oregon State University Extension discusses this approach in its nettle-pesto guidance. It is a preparation technique, not a way to turn already-browned pesto green again or extend the storage time of an opened jar.
Does lemon juice prevent pesto from browning?
The available sources do not establish that adding lemon juice alone will keep opened pesto green. For an existing jar, use a surface barrier, refrigerate it, and follow the applicable safe-use instructions.
