How to Keep Food Cold in a Cooler for a Multi-Day Trip

Use a thermometer—not a guessed ice-retention time—to keep cooler food at or below 40°F. Prepare food cold, pack carefully, limit openings, and plan shelf-stable meals when cold storage will not last.

Keep perishable food at or below 40°F (4°C), and check it with a cooler thermometer rather than guessing how long the ice will last. Chill or freeze food before packing, use enough ice or freezer packs, and keep the cooler shaded and closed. If you cannot maintain that temperature for later days, plan shelf-stable meals instead of relying on an assumed ice-retention time.

Set a temperature target, not a day count

FoodSafety.gov advises keeping cold food at 40°F (4°C) or below. Between 40°F (4°C) and 140°F (60°C) is the food-safety danger zone. A cooler’s size, material, or price cannot tell you whether its contents are still cold enough: trip conditions, how often it is opened, the starting temperature of the food, and the amount of cold source all affect performance.

There is no universal ice quantity or number of safe days that applies to every cooler and trip. Use a thermometer to check the cooler or food during the trip, and make decisions from the readings. See FoodSafety.gov’s road-trip advice for keeping food at or below 40°F.

Prepare food and cold sources before leaving

  • Plan the menu and what needs refrigeration. USDA recommends refrigerating or freezing food overnight before departure; pack it cold or frozen, not warm.
  • Use block ice, frozen gel packs, or frozen drinks. USDA says a block of ice keeps food colder for longer than ice cubes.
  • Bring enough cold sources to keep food at or below 40°F, then check the temperature rather than assuming the amount is sufficient.
  • Pack food in watertight containers so it does not contact meltwater.

USDA’s Food Safety While Hiking, Camping & Boating also notes that a blanket, tarp, or poncho can provide extra insulation over a cooler.

Pack to protect food and limit cooler openings

  1. Arrange items in reverse order of use: food needed later goes in first, with items needed sooner more accessible.
  2. Keep raw meat and poultry separate from ready-to-eat foods. A dedicated cooler is preferable; if using one cooler, place raw meat or poultry below ready-to-eat food and keep it in a watertight container.
  3. For a long trip, use a separate cooler for drinks and frequently accessed snacks. Opening the perishable-food cooler less often helps it stay cold.

Choose a cooler that fits the trip

USDA describes foam coolers as lightweight and low cost, with good cold retention, but fragile. Plastic, fiberglass, and steel coolers are more durable for outdoor use; large models may weigh 30 or 40 pounds when filled. Consider weight, durability, capacity, and how easily you can reach the food you need. These broad material descriptions do not establish that a particular brand, size, or ice-to-food ratio is best.

Manage the cooler on the road and at camp

  • Keep the cooler in the shade and closed as much as practical.
  • Check its temperature with a cooler thermometer; aim for 40°F (4°C) or below.
  • Replenish cold sources when needed, using temperature readings to judge whether food remains safely cold.
  • For trips where reliable cold storage is difficult, carry cold food for the first day and choose shelf-stable food for later days.

Plan later days around available cold storage

USDA recommends cold food for the first day of a backpacking trip and shelf-stable food for subsequent days when carrying cold storage is difficult. Examples include prepackaged shelf-stable meals, dehydrated foods, nuts, dried fruit, jerky, and canned foods. The same planning principle helps on any trip where you cannot reliably maintain the 40°F target.

Know when to discard food

FoodSafety.gov says perishables should not be above refrigeration temperature for more than two hours, or more than one hour when the surrounding temperature is above 90°F (32°C). Do not use smell or taste to decide whether food is safe. USDA advises that cooler leftovers are safe only if ice remains in the cooler; if the ice is gone, discard them.
