For smooth avgolemono, whisk hot broth gradually into the egg-and-lemon mixture before adding it to the pot. Then warm the soup gently over low heat; once the eggs are in, do not let it simmer or boil.
Why egg-lemon soup curdles
Egg proteins thicken as they heat. If the egg mixture meets very hot soup all at once, or the finished soup gets too hot, the eggs can cook into visible bits instead of thickening the broth smoothly. Gradual warming—called tempering—helps prevent that abrupt change.

How to temper eggs for avgolemono
- Take the pot off the heat. Once the rice or other soup base is cooked, remove the pot from the burner while you prepare the eggs.
- Whisk the eggs and lemon juice together. A balloon whisk is convenient, but any suitable whisk that lets you mix steadily will do.
- Whisk in hot broth gradually. Add a small ladleful or a slow drizzle of hot broth to the egg mixture while whisking continuously. Keep adding broth gradually so the eggs warm progressively. One AP/Milk Street recipe uses about one cup of hot rice-and-broth mixture; that is specific to that recipe, not a required amount for every batch.
- Return the warmed mixture to the pot slowly. Pour it in gradually while whisking the soup so it disperses evenly.
- Warm gently over low heat. Stir until the soup is warm and lightly thickened, then take it off the heat. Do not let it simmer or boil.
Heat control matters after tempering
Tempering reduces the shock of adding eggs to hot soup, but it does not make the eggs immune to high heat. AP’s January 6, 2025 article, reproducing recipe guidance credited to Milk Street, says: “And after adding the mixture, don’t let the soup reach a boil or even a simmer.” Use low heat and stop once the soup is warm and lightly thickened rather than trying to thicken it by boiling.

Common mistakes to avoid
- Adding eggs straight to the pot: Direct contact with hot liquid can produce little cooked egg bits. Temper the egg-lemon mixture first.
- Pouring broth in too quickly: Add it in small amounts or a controlled drizzle, whisking throughout.
- Stopping the whisking during either addition: Keep whisking as broth enters the egg mixture and as the tempered mixture goes back into the soup.
- Using a rolling boil to thicken the soup: After adding the eggs, keep the heat low and avoid both a simmer and a boil.
Can you fix soup that has already curdled?
The cited recipe guidance explains how to prevent curdling, but does not establish a reliable way to reverse it. Once egg has fully coagulated into visible bits, blending or straining should not be counted on to restore the original smooth texture.
