For school meals, keep cut fruit and vegetables clean, covered and cold: wash whole produce under running water before cutting, prevent cross-contamination, then refrigerate or otherwise hold cut portions at 41°F or below. Keep them cold during delivery and service, check temperatures under the school’s procedures, and discard leftovers within the applicable time limits.
Wash produce before cutting
Wash whole fruits and vegetables under running water just before preparation—not before putting them into storage. Do not soak produce or leave it in standing water. USDA guidance permits an approved chemical disinfectant when used according to its label. Do not rewash packages labeled ready-to-eat, washed or triple-washed. For melons, wash the rind under cool running tap water and scrub it with a clean produce brush before cutting; reject melons with visible decay or damage. USDA produce safety guidance.

Prevent contamination during preparation
Wash hands before handling produce and again after activities that could contaminate them. Clean, rinse, sanitize and air-dry food-contact equipment and work surfaces. Use gloves, deli paper or utensils as a barrier when handling ready-to-eat produce, but do not treat barriers as a replacement for handwashing. USDA’s food-safety guidance covers these handling steps.
