Why coleslaw makes a sandwich soggy
Cabbage releases moisture, and dressed slaw softens as it sits. Colorado State University Extension advises tossing cabbage with dressing just before serving; dressing it earlier can make the slaw soggy. Health Canada likewise notes that slaw becomes softer and mellower after a day in the refrigerator.

That moisture can soak into a bun if a sandwich is assembled and left to stand. The practical fix is to delay both dressing the cabbage and putting slaw on the sandwich.
Make the slaw ahead without losing as much crunch
- Prep the vegetables: Shred the cabbage and any other vegetables, then cover and refrigerate them. If you rinse the cabbage, drain it well before storing; a salad spinner may help dry it, though it is optional.
- Make the dressing separately: Cover and refrigerate it in its own container rather than mixing it into the cabbage hours ahead.
- Dress near serving time: Toss the vegetables with enough dressing to coat them. The cited guidance supports dressing close to serving, not a particular measured dressing ratio.
- Check for pooled liquid: If liquid has collected in the bowl, drain it or lift the slaw out with a slotted spoon before serving.
Assemble individual sandwiches at the last moment
Put the pulled pork on the bun first, add the slaw immediately before serving, and eat the sandwich promptly. A California Department of Education pulled-pork recipe follows that pork-then-slaw assembly order, holds the prepared slaw refrigerated, and directs that the sandwich be served immediately.

Keeping slaw chilled and assembling sandwiches late helps preserve texture, but it does not replace safe storage. FoodSafety.gov advises refrigerating leftovers within two hours, or within one hour when temperatures are above 90°F (32°C). A California Department of Education school food-service recipe specifies holding prepared coleslaw at 41°F or lower; treat that as the procedure for that institutional recipe and consult current local household guidance for home storage.
