Do these 3 things before closing this tab:
1Repair Windows errors before they cause bigger problems2Fix the driver behind crashes, sound loss and screen glitches3Clear out junk files and repair common Windows errorsTo keep besan wadi soft, first match your method to the kind of wadi you are making. Pan-cooked thapi vadi starts as a smooth batter and is cooked until thick and sticky-dough-like; steamed wadi starts as a thicker paste and is cooked until the slab sets. Their liquid ratios and cooking times are not interchangeable, and there is no single proven fix for every rubbery wadi.
Identify which kind of besan wadi you are making
“Besan wadi” (also spelled “besan vadi” or called “patwadi”) can refer to different preparations. A savoury thapi vadi is thickened in a pan; other savoury versions are steamed in a mould. Sweet besan wadi is a separate confection, so savoury vadi instructions do not apply to it.
| Preparation | Mixture before cooking | Cooking and doneness cue |
|---|---|---|
| Pan-cooked thapi vadi | Smooth besan batter | Stir while cooking until thick and sticky-dough-like; NDTV Food’s recipe gives about five minutes as its timing. |
| Steamed savoury vadi | A thick pouring paste in Chef Kunal Kapur’s lauki-and-besan example | Steam in the recipe’s mould until the slab firms; the cited recipe gives 18–20 minutes. |
| Besan sweet | Roasted gram flour and fat, combined with two-string sugar syrup | A repository search result describes cooking until the mixture leaves the sides. This is a different sweet preparation, not a savoury vadi method. |
The methods and cues above come from different recipes, not a controlled comparison of texture. The stated times are recipe-specific examples, not universal guarantees.

For pan-cooked thapi vadi, follow the texture cue
NDTV Food’s thapi vadi recipe uses one cup of besan and two cups of water. It mixes the flour with one cup of water and rests that batter for 10 minutes; the remaining water is boiled with seasonings.
- Make a smooth batter with the besan and the first portion of water, then rest it for the recipe’s 10 minutes.
- Bring the remaining seasoned water to a boil. Lower the heat before adding the batter.
- Pour in the batter gradually while stirring continuously to help keep it smooth and lump-free.
- Cook and stir until the mixture thickens into a sticky, dough-like mass. The recipe says this takes around five minutes, but use the thickened consistency as the doneness cue rather than treating the time as exact.
- Transfer it to a greased thali, flatten it, let it cool briefly, and cut it as directed.
That one-cup-besan-to-two-cups-water ratio belongs to this pan-cooked recipe. Do not transfer it automatically to a steamed paste or a sweet besan preparation.

For steamed wadi, wait for the slab to set
Steamed recipes use their own mixture and mould. In Chef Kunal Kapur’s lauki vadi recipe, besan is combined with grated bottle gourd, rice flour and seasonings to make a thick pouring paste. The paste goes into a greased 7-by-7-by-2-inch mould and steams for 18–20 minutes. The recipe calls for a firm slab, cut while still warm.
A second, lower-confidence illustration of variation is a social-media recipe attributed to Chef Ranveer Brar and reproduced by Hindustan Times, updated October 3, 2026. It describes steaming besan-and-curd batter in a greased mould for 10–12 minutes, then cooling and cutting it. Hindustan Times says it did not independently verify the social-content claims; treat this as an example of a different method, not a tested standard.

- Use the mould and mixture described by your chosen recipe; differences in ingredients and moulds matter.
- Check for a firm, set slab before unmoulding and cutting. The two cited steaming durations—10–12 minutes and 18–20 minutes—show why a single time cannot be prescribed for every wadi.
- Follow the recipe’s cooling and cutting instructions: the examples differ, with one cut while warm and the other cooled first.
What to check if your wadi turns rubbery
The available recipes describe ingredients, cooking methods and doneness cues; they do not include controlled trials establishing why wadi becomes rubbery or proving a particular fix. Treat the following as practical checks, not guaranteed causes:
- Check that the method and liquid amount match. The 1:2 besan-to-water ratio is for NDTV Food’s pan-cooked thapi vadi, not a general ratio for steamed recipes.
- Check the cooking endpoint. For thapi vadi, cook to the thick, sticky-dough cue. For a mould-steamed version, follow its own instructions and check that the slab has set.
- Do not rely on time alone. The cited recipes differ in ingredients, moulds and cooking method, so their times are not interchangeable.
- Consider excess cooking or mismatched hydration only as hypotheses. They are plausible things to investigate when adjusting a recipe, but the cited sources do not establish either as a definitive cause of rubberiness.
Why sweet besan wadi needs separate instructions
A repository search result describes a sweet besan wadi made by roasting gram flour with fat, adding two-string sugar syrup, and cooking until the mixture leaves the sides. That result is not a savoury steamed-vadi troubleshooting guide, and the repository page was not available to inspect. Do not use savoury batter ratios or steaming cues for this sweet confection.
