Drain wet scraps, and seal particularly smelly food in the refrigerator or freezer if it needs to wait. Baking soda can help control odors, but it does not replace emptying and cleaning.
Use a routine that removes the source of the smell
- Empty food scraps regularly. Take them out before they sit long enough to smell. Seattle Public Utilities suggests every few days; Monash, in Victoria, Australia, recommends emptying a kitchen caddy every two to three days. These are local examples, not a universal schedule. Adjust for how much food waste your household produces and when it can be collected.
- Wash the container. Scrub the can or removable insert with soap or detergent and water, rinse it, and let it dry before putting the liner back. Seattle recommends washing its kitchen container after every use; Sacramento advises frequent washing. Wash the lid and rim too if scraps or liquid have reached them.
- Reduce moisture. Drain excess liquid from scraps before putting them in the container. If a particularly smelly item must wait, seal it and refrigerate or freeze it where practical, then dispose of it according to local rules.
- Use baking soda only as an optional aid. Seattle and Sacramento both suggest sprinkling it in the kitchen container to reduce odors. Their guidance does not quantify the effect, so treat it as an extra measure—not a substitute for emptying and washing.
Choose between a mixed trash can and a food-scrap caddy
If food scraps go into your regular kitchen trash, frequent bag removal and cleaning are the key tasks. A separate caddy can keep scraps together for transfer to an organics collection, where available, but it still needs to be emptied and washed.

Use a liner only if it works with your local collection rules
Paper towels, newspaper, and compostable liners are options mentioned by local authorities, but their acceptance requirements are not interchangeable. Seattle mentions newspaper or paper towels; Sacramento allows paper or a compostable bag that meets its program’s stated certification; Croydon Council in England specifies liner requirements for its own collection system. Check your waste provider’s rules before putting a lined caddy into an organics stream.

Pick a can that is easy to clean
A smooth, durable, leakproof, nonabsorbent container is easier to wash than one that holds residue in porous or hard-to-reach surfaces. USDA FSIS reproduces Food Code provisions describing those qualities for food-residue receptacles in food establishments. That is a useful design principle for a household bin, not a claim that households must meet commercial food-service code.
If the can still smells
- Check the rim, lid, and removable insert for splashes or trapped scraps, then wash and rinse them.
- Look for liquid at the bottom of the can or inside the liner and drain or clean it away.
- Review how long scraps are sitting and whether the bin is exposed to direct sun; change the storage or emptying routine if needed.
Local guidance offers practical steps rather than measured comparisons: it does not establish how much odor baking soda or any liner prevents, or show that a commercial deodorizer works better than cleaning and regular removal.
