“Mountain cheese” alone does not prove where the milk came from or where the cheese was made. In the European Union, check whether the label uses the regulated optional term “mountain product,” names a protected cheese such as a PDO, or simply uses descriptive wording. Each has a different meaning—and the cheese’s own specification is what establishes its particular origin and production rules.
What “mountain cheese” means—and what it does not
There is no single universal legal definition of “true mountain cheese.” The phrase may be descriptive, while “mountain product” is an optional EU quality term with defined conditions. A PDO or PGI, meanwhile, protects a registered product name under its own specification. These are distinct schemes, not interchangeable label claims. The European Commission explains the distinction in its overview of geographical indications and quality schemes.

For the EU optional term, rules connect mountain-area origin to raw materials and animal feed; for processed products, processing is generally tied to mountain areas, subject to specific provisions. Those provisions allow certain qualifying milk products to be processed outside mountain areas under specified conditions, so the wording does not necessarily mean every production step occurred at high altitude. See Delegated Regulation (EU) No 665/2014 for operational conditions.

For Allgäuer Bergkäse PDO, the Commission says production, processing and preparation take place in the specified region. A protected name therefore provides more specific evidence than generic wording, but its requirements apply to that named cheese—not to mountain cheeses as a whole.

How to check a mountain-cheese label
- Look for a protected name and mark. If the package says PDO or PGI, check the exact registered name in the EU geographical-indication register or relevant national register. The Commission’s quality-schemes overview describes registered-name protection and the distinction from other claims.
- Check what “mountain product” refers to. Treat it as a separate optional quality term, not as another name for PDO or PGI. Check the producer and origin details against the applicable scheme rules, including feed and processing conditions in Regulation 665/2014.
- Ask for specifics when the label only says “mountain,” “alpine,” “pasture” or “traditional.” Find out where the milk was produced, what feed or pasture conditions apply, where cheesemaking takes place, and what published standard verifies the claim. These are practical questions, not a universal legal test for every country.
- Do not assume the milk is raw. Check the product specification. Allgäuer Bergkäse’s Commission profile says untreated cow’s milk is heated below 40 °C before renneting; the Vorarlberger Alpkäse notice describes untreated, silo-free alpine raw cow’s milk. Those are product-specific rules, not a general requirement for mountain cheese.
Compare named cheeses by their own specifications
When comparing two named cheeses, use the specification for each one rather than assuming that a feature of one is a category-wide standard. Useful comparison points are:
- Geography and protection: Is the name registered, and what precise area does its specification cover?
- Milk: Where must it come from, and is its treatment specified?
- Feed and pasture: Are there rules for grazing, feed sources or silage?
- Production and maturation: Where must cheesemaking and ripening happen, and for how long?
- Product characteristics: Does the specification set physical, sensory or other requirements?
Allgäuer Bergkäse PDO
The Commission identifies Allgäuer Bergkäse as a PDO produced in Germany’s Allgäu region and says the protected designation guarantees that production, processing and preparation occur in the specified region. Its product profile describes raw cow’s milk from herds grazing on high pastures. The profile reports a four-month ripening period, a rind-matured round weighing 15–50 kg, 62% dry matter, and a minimum full-fat content presented as at least 45–49%. These are figures for this product profile, not general mountain-cheese standards. See the European Commission’s Allgäuer Bergkäse PDO profile.

Vorarlberger Alpkäse
A 2023 Official Journal notice describes Vorarlberger Alpkäse as a hard cheese made on alpine pastures within its defined area from untreated, silo-free alpine raw cow’s milk. Its specification connects the milk’s flavour component to alpine vegetation and predominantly green feed, alongside traditional artisanal production. These details belong to that product’s specification; they do not establish rules for all mountain cheeses. Read the Official Journal notice.
Where these rules apply
The rules described here are EU-specific. Other countries may define mountain areas, protected names, origin claims and certification differently, so do not assume that EU terminology or protections apply everywhere.

The EU’s earlier framework, Regulation 1151/2012, was repealed and replaced by Regulation (EU) 2024/1143. The Commission identifies the 2024 measure as the replacement framework in its overview of geographical indications and quality schemes. For a legal compliance question, consult the current consolidated text of Regulation 2024/1143 and applicable implementing or delegated provisions; the label-check guidance here is not a substitute for legal advice.
